- Peppers:
- 2 Green Peppers
- 1/2 to 1 pound ground beef
- 1 tablespoon olive oil
- 1 small onion or shallot finely chopped
- tomato ketchup
- 1/3 cup beef stock
- 1/4 teaspoon thyme
- 1/4 teaspoon rosemary
- 1/4 teaspoon oregano
- 2/3 cup brown rice (Recipe follows)
- sea salt and pepper
- grated Parmesan or cheddar cheese
- Brown Rice:
- 2 cups long or short-grain brown rice
- 4 cups warm filtered water
- 4 tablespoons whey
- 1 teaspoon sea salt
- 4 tablespoons butter
Large Chef Salad

- Dressing
- romaine lettuce, several large leaves
- 1/4 head lettuce, shredded
- 1/4 cup red cabbage, shredded
- 1/4 cup carrot, shredded
- 1 ounce Swiss cheese, cut into narrow strips
- 1 ounce turkey or chicken, white meat
- spinach leaves, few
- 1 boiled eggs, quartered
- 1 tomato, quartered
- 1 slice green pepper
- freshly ground black pepper
Crab Cake Sliders with Spicy Mayo

If you love crab like I do (lotsa meat, little breadcrumbs) you will just flip for these
- Crab Cakes:
- 1 pound crabmeat (I used Bumble Bee fancy lump crabmeat)
- 1/2 red bell pepper, small diced
- 5 scallions, finely sliced
- 2 garlic cloves, minced
- 1/2 lemon, juiced
- 1/2 cup finely crushed crackers or panko breadcrumbs
- 1/4 cup mayonnaise
- 1 large egg
- 2 teaspoons Worcestershire sauce
- 1 teaspoon dry ground mustard
- 1 teaspoon onion powder
- 1 teaspoon salt
- Dash cayenne pepper
- For Cooking & Serving:
- Olive oil
- 15 slider buns or halved dinner rolls
- 1/2 cup spinach, arugula or sprouts for topping
- Spicy Mayo:
- 1/2 cup mayonnaise
- 1 1/2 Tbsp. lemon juice (from about 1/4 lemon)
- 1 1/2 Tbsp. chili sauce, such as Sriracha
- 1/4 tsp. kosher salt
- 1/8 tsp. freshly ground black pepper
BBQ Mango Tilapia

In a medium bowl, combine tomato sauce, mango nectar, ketchup, brown sugar, vinegar, molasses, and garlic powder
- 1/4 cup canned tomato sauce
- 2 tablespoons (1 ounce) mango nectar
- 2 tablespoons ketchup
- 2 teaspoons brown sugar (loosely packed)
- 2 teaspoons cider vinegar
- 1 teaspoon molasses
- 1/2 teaspoon garlic powder
- 1/4 cup diced tomatoes
- 1/4 cup diced mango
- Two 4.5-ounce fillets raw tilapia
- 1 tablespoon chopped cilantro, for garnish

"Hearty and traditional Irish lamb stew
- 3 medium potatoes cut into rounds
- 1 large onion, chopped
- 4-5 pounds boneless lamb shoulder, cut into 2 inch pieces
- 3 tablespoons butter
- 3 cloves garlic, minced
- 4 cups beef stock
- 2 teaspoons white sugar
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 teaspoon dried thyme
- 1/2 cup water
- 4 cups carrots, large rounds
- 2 large onions, cut into bite-size pieces
- 4 potatoes, peeled and left whole

Bacon Lobster Quiche

- 1 pie crust, raw
- 4 slices bacon
- 2 cups lobster meat
- 1/4 cup scallions, sliced
- 1 cup Swiss cheese, shredded; I prefer cave aged Gruyère
- 3 eggs
- 1/2 cup whole milk
- 1/2 cup heavy cream
- 1/2 teaspoon salt
- dash pepper
- dash nutmeg
- fresh cilantro
Vietnamese chicken pho

To make the Chicken Pho Broth: heat a frying pan over medium heat
- For the Chicken Pho Broth;
- 2 tbsp. whole coriander seeds
- 4 whole cloves
- 2 whole star anise
- 2 quarts (2 liters/8 cups/64 fluid ounces) store-bought or homemade chicken stock
- 1 whole chicken breast (bone in or boneless)
- 1/2 onion
- 1 3-inch (7.5 cm) chunk of ginger, sliced and smashed with side of knife
- 1 to 2 tbsps. sugar
- 1 to 2 tbsps. fish sauce
- 1 lb. (500 grams/16 ounces) dried rice noodles (about 1/4 inch/6 mm wide)
- For the Accompaniments;
- 2 cups (200 grams/7 ounces) bean sprouts, washed and tails pinched off
- Fresh cilantro (coriander) tops (leaves and tender stems)
- 1/2 cup (50 grams/approx. 2 ounces) shaved red onions
- 1/2 lime, cut into 4 wedges
- Sriracha chili sauce
- Hoisin sauce
