- 2 pounds beef top round steak, cut into 3-inch strips
- 2 tablespoons canola oil
- 1 cup chopped onion
- 3 celery ribs, chopped
- 1/4 cup soy sauce
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/2 teaspoon minced garlic
- 1/4 teaspoon ground ginger
- 1/4 teaspoon pepper
- 2 medium green peppers, julienned
- 1 can (15 ounces) tomato sauce
- 1 can (14 ounces) bean sprouts, rinsed and drained
- 1 can (8 ounces) sliced water chestnuts, drained
- 1 jar (4-1/2 ounces) sliced mushrooms, drained
- 1 tablespoon cornstarch
- 1/2 cup cold water
- Hot cooked rice
Smoked Pork Butt

- 7 lbs Fresh pork butt
- 1/2 tsp Salt
- 1/4 cup Brown Sugar
- 2 tbsp Chili Powder
- Suggested wood chips for smoking

Chicken Fried Steak

Preheat oven to 250 degrees F
- 2 pounds beef bottom round, trimmed of excess fat
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 1 cup all-purpose flour
- 3 whole eggs, beaten
- 1/4 cup vegetable oil
- 2 cups chicken broth
- 1/2 cup whole milk
- 1/2 teaspoon fresh thyme leaves

- 1 teaspoon sweet paprika
- 1 teaspoon cayenne pepper
- 1 tablespoon white rice
- 3 tablespoons lime juice, (2 limes)

- 1 (1 1/2 pound) flank steak, trimmed
- Salt, and white pepper, coarsely ground
- 4 shallots, sliced thin
- 1 1/2 cups fresh mint leaves, torn

- 1 Thai chili, stemmed and sliced thin into rounds

Asiago Chicken in a White Wine Mushroom Sauce

The Asiago cheese puts this dish over the top
- 2 large large skinless and boneless chicken breast (about 1 lb)
- 1/2 c all purpose flour
- 1 tsp all purpose seasoning
- 1 tsp paprika
- 2 Tbsp butter
- 2 Tbsp evoo (extra virgin olive oil)
- 2 (4-oz) cans sliced mushrooms, drained
- 1 heaping teaspoon jarred minced garlic
- 1 c dry white wine (I used Chablis)
- 1/2 c chicken broth
- 1 tsp thyme, dried
- 1/4 c Asiago cheese, grated
- 1/2 c heavy cream
Barbecued Pork Southern Style

- 1 pork shoulder roast
- 1 teaspoon celery seed
- 1/3 cup cider vinegar
- 1/2 cup ketchup
- 1/2 teaspoon chili powder
- 1/2 teaspoon ground nutmeg
- 1 teaspoon brown sugar
- 1/8 teaspoon ground cinnamon
- 1 bay leaf, crumbled
- 1/2 teaspoon salt

- 4 cups vegetable broth or 4 cups mock chicken broth

Rump Roast (Slow Cooker)

I enjoy a good pot roast, but I was tired of the same old thing
- 1 boneless beef rump roast (3 to 3 1/2 pounds)
- 2 tablespoons vegetable oil
- 4 medium carrots, halved lengthwise and cut into 2-inch pieces
- 3 medium potatoes, peeled and cut into chunks
- 2 small onions, sliced
- 1/2 cup water
- 6 to 8 tablespoons horseradish sauce
- 1/4 cup red wine vinegar or cider vinegar
- 1/4 cup Worcestershire sauce
- 2 garlic cloves, minced
- 1 1/2 to 2 teaspoons celery salt
- 3 tablespoons cornstarch
- 1/3 cup cold water
