Banana Caramel Cake

In a medium bowl, combine the flour, cinnamon, nutmeg, cloves, salt, and baking soda
- For the cake:
- 3 cups of flour
- 1/2 teaspoon of cinnamon
- 1/4 teaspoon of nutmeg (fresh ground if you have it)
- 1/4 teaspoon ground cloves
- 1 teaspoon of salt
- 1 teaspoon of baking soda
- 3 eggs
- 1 1/4 cups of canola oil
- 2 cups of sugar
- 1 teaspoon of vanilla extract
- 1/2 teaspoon of almond extract
- 1/2 cup of toasted pecans (optional)
- 3 ounces of semisweet chocolate, chopped into coarse chunks
- 1 1/2 cups of diced ripe bananas, about 2 bananas
- Caramel:
- 1/2 cup of firmly packed brown sugar
- 2 tablespoons of whole milk
- 4 tablespoons butter

White Bean & Chicken Chili

1. Season the chicken with half the salt and half the pepper
- 1 pound boneless, skinless chicken breasts, cut into 1/2-inch cubes
- 1 medium onion, chopped
- 1 1/2 teaspoons garlic powder
- 1 tablespoon oil
- 2 cans (15 1/2 ounces each) Great Northern Beans, rinsed and drained
- 1 can (14 1/2 ounces) chicken broth
- 1-2 cans (4 ounces each) chopped green chilies (I'm a wimp and only used 1 can)
- 1 teaspoon salt, divided
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon pepper, divided
- 1/4 teaspoon cayenne pepper
- 1 cup sour cream (I used reduced fat)
- 1/2 cup whipping cream
- cilantro, chopped (to garnish)
- paprika, (to garnish)
Chocolate Eclair Cake

Line the bottom of a 9 x 13 inch pan with graham crackers
- 1 Box graham crackers (not all will be used)
- 2 large boxes (5.1 oz) vanilla instant pudding
- 2 ½ cups skim milk
- 16 oz reduced fat or fat free cool whip
- 1 container chocolate frosting

- Vanilla Cupcakes:
- 2 cups of unbleached all-purpose flour
- 1 1/2 cups granulated sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon teaspoon salt
- 1 1/2 sticks unsalted butter, softened
- 3 large eggs
- 1 1/2 tablespoons vanilla extract
- 3/4 cup sour cream
- 1/2 cup milk

- 1 1/2 bananas, plus 1/2 banana for divided use
- 1 cup milk
- 1 cup heavy cream
- 1/4 cup corn starch
- 1/2 cup sugar, plus 2 tablespoon sugar
- 1 tablespoon vanilla
- 1/4 kosher salt
- Whip Cream Frosting:
- 2 cups of whip cream
- 1 tablespoon granulated sugar
- 1 teaspoon vanilla extract

- 3 slices bacon, cut up
- 1/2 cup chopped green bell pepper
- 1/4 cup chopped onion
- 1/4 cup chopped celery
- 1 1/4 lb boneless skinless chicken thighs
- 2 teaspoons Cajun seasoning
