In a large saucepan, melt butter over low heat
- 1/4 cup butter
- 1 (10 oz., about 40) pkg. regular marshmallows or 3 cups miniature marshmallows
- 5 cups corn flakes (not frosted)
- 1 teaspoon vanilla
- Red Hots
- green food coloring
Fluffy Peanut Butter Frosting

Place the butter and peanut butter into a medium bowl, and beat with an electric mixer
- 1/2 cup butter, softened
- 1 cup creamy peanut butter
- 3 tablespoons milk, or as needed
- 2 cups confectioners' sugar
Lime Chicken Tacos

Place the chicken in a 3 quart slow cooker
- 1 1/2 lbs boneless skinless chicken breasts
- 3 tablespoons lime juice
- 1 tablespoon chili powder
- 1 cup frozen corn
- 1 cup chunky salsa
- 12 flour tortillas ( 6 inches), warmed
- Sour cream, shredded cheddar cheese and shredded lettuce, optional
Strawberry White Chocolate Mousse Crepes

Begin by preparing the mousse
- For the mousse:
- 1 cup milk, 2% or higher
- 1/3 cup sugar
- 2 tablespoons cornstarch
- 1 egg yolk
- 1 teaspoon vanilla
- 1 tablespoon butter
- 3 ounces best quality white chocolate, chopped
- 1/2 teaspoon gelatin
- 1 tablespoon cold water
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- 1/2 teaspoon vanilla
- For the crepes:
- 2 ounces (1/3 cup plus 1 tablespoon) cake flour
- 2 ounces (1/3 cup plus 1 tablespoon) all-purpose flour
- 2 tablespoons sugar
- 2 eggs
- 2 egg yolks
- 4 tablespoons unsalted butter, melted and cooled
- 1 teaspoon vanilla
- 1 cup milk, 2% or higher
- 2 cups strawberries, hulled and sliced
- 1 tablespoon sugar
- 1/4 teaspoon vanilla
- Powdered sugar, for garnish
Peanut Butter Frosting

In a large mixing bowl with a hand mixer, cream together the butter and peanut butter about one minute
- 1/2 cup room temperature soft butter
- 1 cup creamy peanut butter (I used JIF)
- 1 teaspoon vanilla
- 2 cups powdered sugar, sifted
- 2 to 3 tablespoons heavy cream
- 2 to 3 tablespoons non-fat milk
Bow Wow Biscuits

Preheat oven to 350º F. In a big mixing bowl, mix all the ingredients thoroughly to form a dough
- 2 1/2 cups whole wheat flour
- 1/2 cup wheat germ
- 1/2 cup powdered milk
- 8 tablespoons bacon grease (or margarine)
- 1 egg, beaten
- 1 teaspoon brown sugar
- 2 tablespoons beef or chicken broth
- 1/2 cup ice water
- 6 slices bacon, crumbled (optional)
- 1/2 cup cheddar cheese, shredded (optional)
Roasted Parmesan Potato Wedges

Cut each potato lengthwise in half
- 4 potatoes (2 lbs)
- 2 teaspoons vegetable oil
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried basil
- 1 teaspoon seasoned salt
- 1/4 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon pepper
Mexican Cornbread

Directions Preheat oven to 300 degrees F (150 degrees C)
- 1/2 cup butter, melted
- 3/4 cup white sugar
- 4 eggs
- 1 (15 ounce) can cream-style corn
- 1/2 (4 ounce) can chopped green chili peppers, drained
- 1/2 cup shredded Monterey Jack cheese
- 1/2 cup shredded Cheddar cheese
- 1 cup all-purpose flour
- 1 cup yellow cornmeal
- 4 teaspoons baking powder
- 1/4 teaspoon salt

Mix cream cheese and sugar
- 1 box vanilla wafers, Girl Scout Cookies, Oreos, etc.
- 2 packages cream cheese, softened
- 3/4 cups sugar
- 2 eggs
- 1 teaspoon vanilla
- cupcake liners
Chicken & Three Pepper Goulash

Spray the pan with fry light (or add olive oil) and place over a medium heat
- 5 sprays fry light or 1 tbsp olive oil
- 400 g uncooked chicken breast - chopped
- 1 onion - sliced
- 100 g mushrooms - sliced thickly
- 1/2 red pepper - deseeded and chopped
- 1/2 yellow pepper - deseeded and chopped
- 1/2 green pepper - deseeded and chopped
- 1 tsp dried thyme (or 1 tbsp fresh)
- 2 tsp sweet paprika
- 400g can chopped tomatoes
- 200 ml chicken stock - from a cube is fine
- salt and pepper for seasoning
- 2 heaped tbsp low fat crème fraîche
