Mojo Black Bean Chicken Pizza

Heat oven to 400ºF. In a medium bowl, mix cilantro, marinade, onion, salt, pepper, beans and chicken
- 1/4 cup chopped fresh cilantro or parsley
- 1/4 cup mojo criolo marinade OR zesty Italian dressing
- 1/2 small red onion, cut into very thin strips
- 1/4 teaspoon kosher salt
- 1/8 teaspoon cracked black pepper
- 1 (15 ounce) can black beans, drained
- 1 (6 ounce) package refrigerated chicken strips
- 1 (13.8 ounce) can refrigerated pizza crust
- 3/4 cup shredded Monterey Jack cheese
- 3/4 cup shredded mozzarella cheese

1. Preheat oven to 350 degrees and grease two 9x5 loaf pans 2
- 1-15 oz can pumpkin puree
- 4 eggs
- 1 cup oil **note**
- 2/3 cup water

- 3 1/2 cups all-purpose flour
- 2 teaspoons baking soda

Pig City BBQ’s Cheesy Potatoes

Heat oven to 400 degrees. Fry bacon until crisp
- 8 strips of bacon, cooked crisp and crumbled
- 16 ounces sour cream
- 1 10 3/4 -ounce can cream of mushroom soup
- 1/2 cup (1 stick) butter, melted
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 1 tablespoon dried minced onions
- 1/2pound shredded sharp cheddar cheese
- 2 pounds Idaho potatoes, peeled and cut into 1/4-inch cubes
Mexican Casserole

In a large skillet, cook beef over medium heat until no longer pink; drain
- 1-1/2 pounds ground beef
- 1 envelope taco seasoning
- 3/4 cup water
- 1 can (16 ounces) refried beans
- 1/2 cup salsa
- 6 flour tortillas (6 inches)
- 2 cups frozen corn, thawed
- 2 cups (8 ounces) shredded cheddar cheese

- 2 lbs ground turkey
- 3 (15 ounce) cans chili beans, drained
- 1 (15 ounce) can chili beans in spicy sauce
- 2 (28 ounce) cans diced tomatoes with juice
- 1 (6 ounce) can tomato paste
- 1 large yellow onion, chopped
- 3 stalks celery, chopped
- 1 green bell pepper, seeded and chopped
- 1 red bell pepper, seeded and chopped
- 4 cubes chicken bouillon
- 1/2 cup beer
- 1/4 cup chili powder
- 1 tablespoon Worcestershire sauce
- 1 tablespoon minced garlic
- 1 teaspoon dried oregano
- 2 teaspoon ground cumin
- 2 teaspoons hot pepper sauce (e.g. Tabasco™)
- 1 teaspoon dried basil

- 6-8 eggs
- 1 cup ricotta cheese
- 1 cup freshly grated Parmesan cheese
- 1/4 teaspoon Tabasco sauce or other hot chili sauce
- 1 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 3 cups grated zucchini (from 2-3 fresh zucchinis)
- 1 1/2 cups chopped plum tomatoes (from 4-5 fresh tomatoes),
- 1/2 cup sliced fresh basil (from about 20 leaves)*
- 4 cups cubed day-old bread (from about 4 slices)
