1.In a large bowl, break up tomatoes in their juice
- 1 (14.5 ounce) can stewed tomatoes
- 1 cup cola-flavored carbonated beverage
- 1 packet dry spaghetti sauce mix
- 1 cup chopped onion
- 3/4 cup chopped celery
- 1 1/2 teaspoons salt
- 1/2 teaspoon garlic salt
- 3 pounds beef chuck roast
- 2 tablespoons vegetable oil

Spinach Cheese Ball

- 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
- 2 (8 ounce) packages cream cheese, softened
- 1 (4 ounce) can water chestnuts, drained and chopped
- 1 (.4 ounce) packet dry vegetable soup mix
- 2 tablespoons mayonnaise
- 1 cup finely shredded Cheddar cheese
- 1/2 cup chopped walnuts
Sweet Idaho Potato Salad

- 1 sweet potato
- 4 eggs
- 2 stalks celery, chopped
- 1/2 onion, chopped

Fiesta Chicken & Black Bean Enchiladas

- Cooking spray
- 1/4 cup chicken broth
- 1 (16 ounce) skinless, boneless chicken breast
- 1 medium onion, diced
- 1 red pepper, stemmed, seeded, and diced
- 1 (15 ounce) can black beans, drained and rinsed
- 1 cup corn kernels
- 1/4 cup packed chopped fresh cilantro
- 1 (4 ounce) can diced green chilies
- 2 1/4 cups grated low-fat sharp Cheddar cheese, divided
