- 1 lb ground beef
- 1 cup diced onion
- 1 cup julienned carrot
- 3 stalks celery, chopped (1 cup)
- 2 garlic cloves, minced
- 2 (14 1/2 ounce) cans diced tomatoes
- 1 (15 ounce) can red kidney beans (with liquid)
- 1 (15 ounce) can great northern beans (with liquid)
- 1 (15 ounce) can tomato sauce
- 1 (12 ounce) can v-8 vegetable juice
- 2 beef boullion cubes
- 1 teaspoon vinegar
- 1 1/2 teaspoons salt
- 1 teaspoon oregano
- 1 teaspoon basil
- 1/2 teaspoon pepper
- 1/2 teaspoon thyme
- 1/2 lb ditali pasta
- Additional water as needed
Corn and Green Chile Fritters

Double or triple the recipe, and then freeze the extras on layers of parchment paper to enjoy for weeks to come
- 3 cups fresh corn (you can use frozen corn too)
- 4 eggs
- 4 green onions thinly sliced
- ½ Bag of Frozen New Mexican Connection Green Chile (1/2 pound)
- 1 cup grated jack cheese
- 1 cup flour
- 2 Tbsp. cornmeal
- 1 tsp. Old Bay seasoning
- 1 tsp. Salt
- 1 1/4 cups corn oil
Roasted Tomato Salsa

Roasted Roma Tomatoes Instructions: 1
- Roasted Tomato Salsa
- 2/3 cup roasted tomatoes (see Roasted Tomato recipe)
- 6 tomatillos, washed and cut in half
- 1/2 medium onion, cut into 1 inch chunks
- 2 cloves garlic
- 1 jalapeno (seeds removed for less spicy salsa)
- 2 Tbs fresh lime juice
- 1 Tbs lime zest
- 3 Tbs fresh cilantro leaves
- 1/2 tsp kosher salt
- Roasted Roma Tomatoes
- 12 roma tomatoes, diced into 3/4-1 inch pieces
- 5 Tbs extra virgin olive oil, divided
- 1 tsp kosher salt
- pepper to taste
Bourbon Marinated Salmon

1. Combine first 7 ingredients in a large zip-top plastic bag and remove 4 tablespoons for later
- 4 (7 oz.) skinless salmon fillets
- 4 tablespoons brown sugar
- 4 tablespoons bourbon
- 3 tablespoons low-sodium soy sauce
- 1 tablespoon grated and peeled fresh ginger
- 2 tablespoon fresh lime juice
- 3 garlic cloves, minced
- 1/4 teaspoon freshly ground black pepper
- Canola oil to coat the grill grates
- 1/4 cup thinly sliced green onions
Turbo Cooker Chicken Enchiladas

Prep: Mix chicken and onion together in a bowl; season with salt and pepper
- 2 10 oz cans chicken, drained
- 1/2 medium onion
- 1 can 98%fat-free cream of chicken soup
- 1/2 cup non-fat sour cream
- 3 roasted and peeled green chilies
- 6 corn tortillas
- 3/4 cup salsa
- 3/4 -1 cup shredded Mexican 4 cheese blend
- 1/4 cup vegetable oil
- 1/4 cup water
- salt and pepper to taste
WHITE CHEDDAR & BACON DIP

- 1 cup Vermont white cheddar, shredded
- 1/2 cup cheddar jack cheese, shredded
- 8 oz. cream cheese, softened
- 8 slices bacon
- 2 tablespoons of green onions, chopped
- 1 tablespoon of fresh parsley, chopped
- Flatbread or crackers for dipping

- 1/2 cup heavy cream

Green Chile Salsa

- 2-3 roasted Green Chiles
- 5-7 cooked tomatillos
- 1-2 garlic cloves
- 1 & 1/2 tsp kosher salt
- 1 tsp ground cumin
- 2 tsp Green Chile powder
- 1 tbsp lime juice
- Water to thin
