Broccoli Mac and Cheese Casserole

1. HEAT oven to 350ºF. 2
- 2 cups elbow macaroni, uncooked
- 1/4 cup butter
- 1/4 cup flour
- 2 cups milk
- 1/2 lb (8 oz.) VELVEETA®, cut into 1/2-inch cubes
- 2 cups small fresh broccoli florets, cooked
- 1 cup KRAFT Shredded Sharp Cheddar Cheese, divided
- 1/2 cup French fried onions
Crab Mac and Cheese

Preheat oven to 350 degrees
- 8 oz whole wheat fusilli (or any short cut pasta that you like), cooked to al dente
- 4 tbsp butter, divided
- 2 tbsp flour
- 2 cups milk (I used 1%)
- 1/2 tsp dry mustard
- 1 cup each shredded Swiss, cheddar and monterey jack cheeses
- 8 oz lump crab meat
- 2 large roma tomatoes, seeded and chopped
- 1 cup panko bread crumbs
- 1 clove garlic, grated or finely minced
- 2 tbsp parsley
- salt and pepper
- optional, truffle oil for drizzling
Sweet Potato Casserole

1. Preheat oven to 350° F and butter a 2 quart baking dish
- Filling:
- 3 cups mashed sweet potatoes (3-4 large, baked)
- 1/2 cup milk
- 1/2 cup brown sugar, packed
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup mini marshmallows
- Topping:
- 1/2 cup all purpose flour
- 1/2 cup brown sugar, packed
- 4 tablespoons unsalted butter, melted
- 1/4 teaspoon salt
- 1 cup mini marshmallows
Crockpot Cheese Tortellini and Sausage

1. Brown the sausage in a skillet on the stove top until cooked and crumbled
- 1 (19 oz.) bag frozen cheese tortellini
- 1 lb. sausage (I prefer Hot Italian)
- 1 bag fresh spinach
- 2 cans Italian style diced tomatoes
- 2 cans low-fat chicken broth
- 1 (8 oz.) cream cheese, cut into cubes
- 1 can mushrooms

- 1 cup gravy, leftovers (cold and gelled works best)
- 1/4 teasppon Poultry Seasoning

- 3 eggs
- Flour

- 4 hard-boiled eggs, chopped
- 1 ⁄2-1 onion, chopped
- 6 green onions, sliced thin
- 3 stalks celery, chopped
- 1 ⁄3 cup Miracle Whip
- 1 ⁄3 cup mayonnaise
- 1 ⁄3 cup sour cream
- salt and pepper
