In a medium saucepan, stir together sweetened condensed milk, powdered sugar, and whiskey
- 1 14 - ounce can sweetened condensed milk
- 1 cup powdered sugar
- 1/4 - 1/2 cup whiskey
- 1/2 cup butter, cut up
Green Chile Chicken Enchiladas

•1. Preheat oven to 400°
- 1 pound roasted skin-on green New Mexico Chiles
- 2 tablespoons olive oil
- 1 tablespoon butter
- 5 large garlic cloves, finely chopped
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 3 cups chicken broth, divided
- 10 (7- to 8-in.) corn tortillas
- 2 1/2 cups shredded cooked chicken (see Notes)
- 2 cups coarsely shredded cheddar or jack cheese, divided
- Sour cream
Corn Nuggets

This southern side dish is great with barbecue or as an appetizer at a pool party
- 1 (11-ounce) can creamed corn
- 1 (11-ounce) can whole kernel corn, drained
- 1/2 cup yellow cornmeal
- 1/2 cup all purpose flour
- 1 egg white
- 2 tablespoons milk
- salt and pepper to taste
- 3 cups vegetable oil for deep frying
Smokey Flame-Roasted Green Chile Guacamole Dip

•Remove the skin from the roasted green chiles
- 2-4 Flame Roasted Whole Hatch Green Chiles......diced up small
- 3 large or 4 medium ripe avocados
- 1/2 white onion, peeled and finely chopped
- 1 Serrano chile, finely chopped (if more HEAT is needed)
- 2 tablespoons lime juice
- 1/2 cup fresh cilantro, finely chopped
- 1 teaspoon salt
- 1 small tomato - diced
Creamy Green Chile Chicken Soup

1. In a large saucepan or dutch oven, heat oil over medium heat
- 1 Tbsp canola oil
- 1/2 large onion, diced
- 2 garlic cloves, minced
- 3 cups chicken stock
- 1 1/2 cups chicken, cooked and shredded
- 1 cup roasted green chile, diced
- 1 Tbsp flour
- 8 oz. cream cheese, softened
- 1 cup half and half
- 1/2 tsp garlic powder
- 1/4 . tsp onion powder
- 1/4 tsp salt
- 1/2 tsp pepper
Crab Dip

1. Heat oven to 350 degrees
- 1 lb Cream Cheese, softened
- 2 cans Cream of Mushroom soup
- 8 oz Mayonnaise (not Miracle Whip)
- 2 Tbsp White Wine
- 1 can Jumbo Lump Crab Meat
- Old Bay seasoning to taste (I use a lot!)
Green Chile Stew

1. Heat oil to shimmering in a large saucepan or small Dutch oven over medium-high heat
- 1 lb ground pork
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 Tbsp oil, for frying
- 1 Tbsp flour
- 3 sliced potatoes
- 1/2 to 1 cup chopped green chile, to taste
- 1 quart of chicken stock
- Salt and pepper to taste
Slow Cooker Low-Fat Loaded Potato Soup

1. Spray the inside of slow cooker with cooking spray and set the temperature to HIGH
- For Garnish:
- 6 Yukon Gold potatoes, peeled and cut into 1/2-inch cubes
- 40 oz low-fat chicken broth
- 1 tsp salt
- 1 tsp black pepper
- 1/8 tsp red pepper flakes
- 6 carrots, peeled and thinly sliced
- 1/2 sweet yellow onion, diced
- 2 cloves garlic, peeled and minced
- 2-3 Tbs olive oil
- 1 tsp Parisien Bonnes Herb or a blend of chives, French tarragon, basil & dill 1 1/2 cups fat-free half-and-half
- 1 1/2 cups low-fat cheese, cheddar or Gruyere work well
- 2 Tbs fresh chives, chopped
- low-fat sour cream
- turkey bacon, cooked and crumbled
- chopped green onions, thinly sliced OR
- chives, chopped
Turkey Brine

- 1 cup sea salt
- 1 tablespoon crushed dried rosemary
- 1 tablespoon dried sage
- 1 tablespoon dried thyme
- 1 tablespoon dried savory
