- 2 avocados
- 1 jalapeno, coarsely chopped (remove seeds for less heat)
- 1 clove garlic
- 1 teaspoon cumin, toasted and ground
- salt and pepper to taste
- 1 handful cilantro
- juice from 1/2 lime
- 4 cups cooked shredded chicken
- 2 avocados, diced
- 4 green onions, sliced
- 2 cups cheddar cheese, shredded
- 2 cups monterey jack cheese, shredded

- 2 eggs – lightly beaten
- 1 cup milk

Cedar Planked Verlasso Salmon

1 Immerse an untreated, cedar plank in water; soak at least 1 hour or up to 1 day
- 1 cedar plank
- 2 lbs Verlasso Salmon Fillets
- 2 TBSP Olive Oil
- Kosher Salt & Freshly ground Pepper to taste
Salsa

In a food processor, toss everything in and pulse to your desired consistency
- 1 & 1/2 14.5-oz. cans diced tomatoes (juice and everything)
- 1 Serrano pepper, sliced (test for heat–use less or seed the pepper to reduce heat)
- Half of an onion (use your judgement here as onions vary in pungency)
- Half of a red, yellow, or orange bell pepper, seeded
- 1 tablespoon juice from a fresh lime (in a pinch, lemon juice works as a substitute)
- 1 tsp. salt
- 1/4 tsp. ground cumin (or to taste)
- 1 tsp. minced garlic (or to taste)
- Cilantro to taste (I usually take a bunch of cilantro, grab it by the leafy end and rip off about a handful–really exact measurements, I know…)

- Cake:
- 2 2 2 cups flour
- 1 2/3 1 2/3 2/3 cup sugar
- 2/3 2/3 2/3 cup Hershey's unsweetened cocoa (or other high-quality chocolate)
- 1 1 1 teaspoon vanilla
- 1 1/4 1 1/4 1/4 teaspoon baking soda
- 1 1/4 1 1/4 1/4 teaspoon baking powder
- 3 3 3 eggs
- 1 1/3 1 1/3 1/3 cup water
- 1 1 1 cup Hellman's (Best Foods) real or light mayonnaise
- Frosting:
- 1 1 1 stick (1/2 cup) butter or margarine (we used butter)
- 2/3 2/3 2/3 cup Hershey's unsweetened cocoa powder
- 3 3 3 cups powdered sugar
- 1/3 1/3 1/3 cup milk
- 1 1 1 teaspoon vanilla extract
- 1/4 1/4 1/4 cup cocoa nibs (optional for decoration)
