Baked Banana 'French Toast' With Pecan Sauce

Preheat the oven to broil
- Pecan Sauce:
- 4 tablespoons butter softened
- 1/2 cup packed light brown sugar
- 10 12 slices white sandwich bread cut in fourths, crusts trimmed
- 5 firm-ripe bananas peeled and cut in half lengthwise
- 1 dozen large eggs
- 2 cups half and half
- 1/4 cup banana liqueur* optional
- 3/4 teaspoon cinnamon
- 1 recipe Pecan Sauce (recipe follows)
- 1 1/2 cups sugar
- 1/4 cup water
- 1 cup heavy cream
- 1 cup pecans, toasted and chopped
- 2 tablespoons butter
- pinch of salt
- 2 teaspoons vanilla
- 2 tablespoons bourbon or dark rum (optional)
Roasted Vegetable Udon

1.Char peppers over open flames
- For the Vegetables:
- 2 red bell peppers
- 2 yellow bell peppers
- 1 large onion
- 1 bunch scallion bottoms, cut into 1 inch pieces
- For the Sauce:
- 4 ounces toban dian (chili bean sauce; we use LEE KUM KEE brand)
- 4 ounces soy sauce
- 8 ounces water
- 8 ounces sugar
- For the Udon:
- 16 ounces udon noodles (we use futonaga)
- 12 ounces shrimp (16- to 20-count), peeled; deveined; cut in half lengthwise
- 1 ounce ginger, peeled; julienne
- 3 large cloves garlic, sliced thin
- 4 cups spinach leaves
- 2 ounces freshly toasted sesame seeds; black and white
- garlic chips
- cilantro, to garnish
- For the Garlic Chips:
- 3 large cloves garlic, sliced thin
- 1 cup vegetable oil
- salt

- 3 tablespoons butter

- 1 3/4 teaspoons basil

Grilled Vegetarian Paella With Basil-Tomato Slaw

In a hot oven-proof skillet coated with olive oil, saute rice, shallots, garlic and ginger for 4 to 6 minutes
- Olive oil to cook
- 4 cups basmati rice
- 5 minced large shallots
- 1 tablespoon garlic
- 1 heaping tablespoon minced ginger
- Salt and black pepper to taste
- 1/2 tablespoon tumeric
- 6 cups vegetable stock
- 4 cups mixed grilled vegetables, 1/2-inch dice (1 zucchini, 1 eggplant, 1 red bell pepper, 1 large red onion, 1 fennel, 1/4-inch thick sliced and grilled with olive oil, salt and pepper)

- 1/2 cup half and half

- 4 eggs, beaten
- 1/8 tsp. ground nutmeg
- 9 oz. pkg. frozen spinach, thawed and very well drained
- 1/2 cup shredded Havarti cheese

- Leeks:
- 2 large leeks (white and pale green parts only), halved, thinly sliced crosswise (about 2 cups)
- 3/4 cup whipping cream
- Mushrooms:
- 1 pound shiitake mushrooms, stemmed, cut into 1/4- to 1/3-inch-thick slices
- 1 large onion, halved, thinly sliced lengthwise
- 1/4 cup (1/2 stick) butter, melted
- 1 tablespoon white truffle oil
- 1 teaspoon minced fresh thyme leaves
- Risotto:
- 4 tablespoons (1/2 stick) butter, divided
- 1 large onion, chopped
- 1 1/2 cups arborio rice or medium-grain white rice
- 1/2 cup dry white wine
- 5 cups (or more) hot vegetable broth
- 1/2 cup grated Parmesan cheese
- 2 teaspoons shaved or chopped black truffle (optional)

- For dough:
- 1 1/4 cups warm water (105°F.)
- 3/4 stick (6 tablespoons) unsalted butter, melted and cooled slightly
- 6 tablespoons granulated sugar
- two 1/4-ounce packages active dry yeast (5 teaspoons total)
- 3 large eggs beaten lightly
- 1 1/2 teaspoons salt
- 1/4 cup powdered nonfat dry milk
- 5 to 6 cups all-purpose flour
- For filling:
- 1/2 stick (1/4 cup) unsalted butter, softened
- 1/2 cup granulated sugar
- 2 tablespoons ground cinnamon
- 3 tablespoons cardamom seeds, ground
