Potato Chip Cookies

Preheat oven to 375 degrees
- 2 sticks unsalted butter, softened
- 3/4 cup packed light brown sugar
- 3/4 cup granulated sugar
- 1 tsp. vanilla extract
- 2 large eggs
- 2 1/4 cups all purpose flour
- 1 tsp. baking soda
- 3/4 tsp. coarse salt
- 4 cups coarsely crushed salted potato chips (about 10 oz.) divided
- 1 cup pecans, toasted and coarsely chopped
Braised Eggplant with Onion and Tomato

Heat oven to 400 degrees. Arrange eggplant halves, cut sides up in a 9 x 13 inch baking pan
- 2 large eggplants, halved lengthwise
- 2 tsps. Kosher or sea salt, divided
- 1 medium sized onion, cut into wedges
- 1/4 cup olive oil
- 1 large tomato, cut into 1/2 inch pieces
- 1/4 cup chopped fresh parsley
- 2 tbs. chopped fresh basil
- 1 tbsp. granulated sugar
- 1/2 cup chicken or vegetable broth
Green Bean Salad

Put 2 inches of water into a medium sized pot(3-4 quart)
- 1 pound fresh green beans ends trimmed
- 2 tbsps. olive oil
- 1 garlic clove, minced
- 2 tbsps. minced fresh parsley
- 2 tsps. lemon juice
- 1 tsp. kosher or sea salt
- 1/2 tsp. freshly grated lemon zest
- 1/2 tsp. freshly ground pepper
Peanut Sauce

In a food processor or blender combine ingredients and process on high speed until smooth
- 1 cup creamy peanut butter
- 3 cloves garlic
- 2 tbsps. peeled and coarsely chopped ginger
- zest and juice of one large lime
- large pinch of cayenne pepper
- 2 tbsps. of honey
- 3 tbsps. soy sauce
- 1 tbsps. rice vinegar
- 1 tbsp. toasted sesame oil
- 2 - 4 tbsps. light coconut milk or water, as needed to reach desired texture
- Salt to taste
Bachelor's Dip

Appetizer
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1 clove garlic, minced
- 2 tbsp. chives
- 6 oz. cheddar cheese(both cheeses finely grated)
- 4 oz. swiss cheese
- 1/4 cup beer
- and a little salt
Chicken Masala

Heat 1 tbsp. oil in a large saucepan over medium high heat
- 1 tbsp. peanut oil
- 1 large shallot, finely chopped
- 1/4 white onion, chopped more is better
- 2 tbsps. butter
- 2 tsps. lemon juice
- 1 tbsp. ginger garlic paste
- 1 tsp. Garam masala
- 1 tsp. chili powder
- 1 tsp. ground cumin
- 1 bay leaf
- 1/4 cup plain yogurt
- 2 nd
- 1 cup tomato puree
- 1/4 tsp. cayenne pepper or to taste
- 1 pinch salt
- 1 pinch black pepper
- 1/4 cup half and half until sauce is pink
- 1 tbsp. peanut oil
- 1 lb. boneless, skinless chicken thighs, cut into bite size pieces
- 1 tsp. garam masala
- 1 pinch cayenne pepper
- 1 tbsp. cornstarch
- 1/4 cup water
Pumpkin Bread

Grease two 9x5x3" loaf pans; dust lightly with flour, tap out any excess
- 3 cups sugar
- 1 cup vegetable oil
- 12/3 cup (1lb) can pumpkin
- 4 eggs, beaten
- 31/2 cups all purpose flour
- 2 tsps. baking soda
- 2 tsps. salt
- 1 tsp baking powder
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1 tsp allspice
- 1/2 tsp ground cloves
