Bacon Wrapped Shrimp

Wrap 12 large shrimp, shelled and deveined, in 2 basil leaves each
- 12 large shrimp
- basil leaves
- 6 slices bacon
Corn Pudding

Preheat oven to 350 degrees
- 2 sticks (16 tbsps) butter, melted
- 2 cans (11 oz each - 22 oz total) whole kernel corn
- 2 cans (14.5 oz each - 29 oz total) sweet corn, cream style
- 2 pkgs. (8.5 oz - 17 oz total) Jiffy corn muffin mix
- 1 16oz container sour cream (use full fat)
- Cinnamon sugar (optional)
Broccoli Cashew Salad

In a large bowl, combine the first six ingredients
- 2/3 cup fresh cauliflower florets
- 2/3 cup fresh broccoli florets
- 1/2 cup chopped zucchini
- 1/3 cup canned garbanzo beans or chickpeas, rinsed and drained
- 1/4 cup chopped celery
- 3 tbsp. chopped red onion
- 2 tbsp. plain yogurt
- 2 tbsp. mayonnaise
- 1/8 tsp. celery seed
- 1/8 tsp. salt
- 1/8 tsp. pepper
- 3 tbsp. chopped cashews
- Can add chicken, shrimp or cooked pasta
Sea Scallops With Almond Sauce

Combine oil and half the butter in a large skillet, preferably nonstick
- 1 tbsp. olive oil
- 2 tbsps. butter
- 1 1/2 About 1 1/2 lbs. sea or bay scallops
- Salt
- Pinch cayenne pepper
- 1/3 cup roughly chopped almonds
- 3/4 cup dry white wine
- Chopped parsley for garnish

Soften butter or margarine
- 3/4 cup (1 1/2 sticks) butter or margarine
- 1/2 cup sugar
- 2 tsps. vanilla extract
- 1/4 tsp. salt
- 2 cups sifted all purpose flour
- 1 large egg white, lightly beaten
- 1 1/2 cup chopped pecans
- 2 tbsps. sugar
Shrimp Mark's Way

Put the oil in a large skillet over medium heat and add the garlic
- 1/2 cup olive oil
- 2 tbsps. slivered garlic
- 1 tbsp. paprika
- 1 tablespoon cumin
- 3 to 4 pounds shrimp, peeled or not
- Kosher salt and pepper
- Chopped parsley
- Lemon wedges
Lobster Mac & Cheese

- 1 pound shaped pasta, such as elbows or shells
- 8 tbsps. of salted butter, divided
- 1 small yellow onion, diced
- 1 garlic clove, minced
- 5 tbs. all purpose flour
- 2 cups light cream
- 2 cups shredded Gruyere cheese
- 3 cups shredded cheddar cheese
- 1/2 cup grated Romano cheese
- Kosher or sea salt and freshly ground pepper to taste
- 8 oz. cooked lobster meat
- Topping: 2 tbsp. salted butter
- 3/4 cup Panko breadcrumbs
- 1 tsp. chopped fresh parsley
Baked Summer Squash

- 1 1/2 to 2 lbs. summer squash(zucchini, yellow, etc.)
- 1/4 cup olive oil
- 1/3 cup bread crumbs
- 1/3 cup grated Parmesan cheese
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/4 cup chopped fresh herbs, such as basil, thyme, parsley and oregano

- 1/2 stick butter
- 1 tbsp. baking powder

- Filling
- 1/2 cup rice uncooked
- 1 quart milk
- 1 lb. Ricotta cheese
- 1 tbsp. lemon juice
- 6 eggs
- 1 1/2 cup sugar
- grated lemon rind
