Quick Chocolate Cake

Heat chocolate, water and shortening in top of double boiler until chocolate is melted
- 2 oz. Chocolate
- 1 cup boiling water
- 1/2 cup shortening
- 2 cups sugar
- 1/2 tsp. salt
- 2 cups sifted flour
- 1 1/2 tsps. baking soda
- 1/2 cup sour milk
- 2 eggs, beaten
Cranberry - Orange Relish

Using a food processor, pulse the cranberries and oranges
- 1 (12 oz.) bag fresh cranberries
- 2 oranges, peeled
- 1 cup sugar
- 1/2 cup pecans, finely chopped
Easter Neapolitan Cream Pie

Crust Mix together flour, baking powder, and sugar
- Crust
- 2 1/2 cups flour
- 1 tsp. vanilla
- 3 level tsps. baking powder
- 3/4 cup sugar
- 3 eggs
- 3 tbsps. butter
- Filling
- 4 oz. cornstarch
- 1 3/4 cup sugar
- 6 egg yolks
- grated rind of lemon
- 1 quart milk
- 2 squares unsweetened chocolate
Impossible Pie

Preheat the oven to 350 degrees and butter two 9 inch glass pie plates
- 1 stick unsalted butter, melted, plus more for greasing
- 1 3/4 cups sugar
- 4 large eggs
- 1/2 cup self rising flour
- 2 cups sweetened shredded coconut
- 2 cups milk
Fresh Guacamole

Mix all ingredients. Refrigerate overnight
- 2 avocados, mashed
- 2 tomatoes, diced, mashed
- 1 medium onion, diced
- 1/4 cup vegetable oil
- 2 tbsps. lemon juice
- 1 tbsp. chili powder
- 1 tsp. salt
- 1/8 tsp. cayenne pepper
- 1/8 tsp. curry powder
Parsley, Orange and Pecan Crusted Rack of Lamb

Preheat oven to 450 degrees
- 2 rackd Australian Lamb(8 chops to each rack)
- 2 tbsp. olive oil
- To taste salt and freshly ground black pepper
- 1 cup fresh parsley leaves, roughly chopped
- 2 each garlic cloves, crushed
- 3/4 cup pecans, toasted and finely chopped
- zest of 1 orange,finely grated
- 2 tbsp Dijon mustard
Gazpacho

Prep time: 25 minutes Serves 4-6
- 1/2 red onion chopped
- 3 lb. heirloom tomatoes, seeded and chopped
- 1 1/2 cucumbers, peeled, seeded and chopped
- 5 tsp. fresh lemon juice
- 4 tbsp. olive oil
- 2 tsp. minced fresh flat leaf parsley
- Kosher salt and freshly ground pepper to taste
- 2 garlic cloves
- 1/2 tsp. minced fresh thyme
- 2 tbsp. sherry vinegar
- 2 cups cubed French bread
- 1 large red bell pepper, seeded and chopped
Shrimp Puffs

In a medium sized bowl, whisk together flour, salt and baking powder
- 1 cup flour
- 1/2 tsp. salt
- 1 tsp. baking powder
- Zest of 1 lemom
- 1 tbsp. chopped fresh parsley
- 1 tbsp. chopped fresh dill
- 1 tbsp. chopped fresh chives
- Freshly ground pepper
- Juice of 1 lemon
- Milk
- 1 egg, beaten
- 1 pound (about 2 cups) raw shrimp peeled
- Vegetable oil
- Kosher or sea salt
- Garlic and Herb Aioli
Peach Custard Pie

Crumble dry ingredients and butter with pastry blender
- Crust:
- 1 1/2 cups flour
- 1/2 tsp. salt
- 1 stick butter, softened
- Filling:
- 1 lb. 14 oz. sliced peaches, drained
- 1/2 tsp. cinnamon
- 1/2 cup peach juice
- 1 cup evaporated milk
- 1 egg

- 4 tbsp. vegetable oil
- 1 large onion, diced
- 2 tbsp. chopped fresh basil, divided
- 5 garlic cloves, crushed
- 1 tbsp. chopped fresh oregano
- 3 (28 oz) cans plum tomatos
- 3 (28 oz) cans crushed tomatoes
- 3 1/2 cups water
- 6 t6sps. sugar
- 1 tsp. salt
- 1 lb. sweet Italian sausage links
- 1 lb. uncooked meatballs
