Pasta E Ceci Soup

In a 3 1/2 quart Dutch oven over medium heat, warm 3 tbsps
- 3 tbsps. plus 1/2 cup extra virgin olive oil
- 2 carrots, finely diced
- 1 large yellow onion, finely diced
- 1 1/2 tsp. minced garlic
- 1/3 cup diced tomato
- 1 1/4 cups dried chickpeas, soaked in water overnight, drained and rinsed
- 6 cups water
- 2 fresh thyme sprigs
- 1/4 cup vegetable oil
- 3 fresh rosemary sprigs, cut into 1 1/2 inch lengths
- Kosher salt to taste
- 1/2 lb. tubetti pasta, cooked until al dente and drained
- Freshly ground pepper to taste
- Shaved Parmigiano-Reggiano cheese for serving
Gingered Stir Fry with Shrimp and Snowpeas

In a small bowl, whisk the chicken stock with the soy sauce, Chinese chili garlic sauce and cornstarch
- 1/2 cup chicken stock or low sodium broth
- 2 tbsps. low sodium soy sauce
- 1 tsp. Chinese chili garlic sauce
- 1 tsp, cornstarch
- 2 tbsps. vegetable oil
- 1/4 cup fresh ginger, cut into fine matchsticks
- 1/2 pound snow peas
- 1 pound medium shrimp, shelled and deveined
- 4 small scallions, thinly sliced on the diagonal
- Steamed rice for serving
Herb Crusted Leg of Lamb

Pat lamb dry, generously season with salt and pepper
- 1 bone in leg of lamb, 5 1/2-6 lbs., fat trimmed
- Kosher salt and freshly ground pepper to taste
- 2 1/2 cups fresh bread crumbs
- 2 garlic cloves, minced
- 1/4 cup fresh flat leafed parsley
- 1 tbsp. chopped fresh rosemary
- 1 tbsp. chopped fresh thyme
- 1/4 cup olive oil
- 1/4 cup Dijon mustard
Sauteed Snow Peas with lemon and parsley

Combine 1 tsp. oil, shallot, and lemon zest in small bowl
- 1 tbsp. vegetable oil
- 1 shallot, minced
- 1 tsp. grated lemon zest plus 1 tsp. lemon juice
- 1/4 tsp. salt
- 1/8 tsp. sugar
- 3/4 lb. snow peas, tips pulled off and strings removed
- 1 tsp. minced fresh parsley
- (Chives or tarragon can be used in place of parsley)
Parmesan Lamb Chops

Season chops with salt and pepper
- 8 3 oz rib chops
- salt and pepper
- 1/2 cup bread crumbs
- 1/2 cup grated Parmesan
- 1/2 tsp. powdered fennel seed
- 1 tsp. finely chopped rosemary
- 1/2 cup flour seasoned with 1/2 tsp. salt,1/4 tsp. pepper, and pinch cayenne
- 2 small eggs, lightly beaten
- olive oil for frying
- parsley sprigs and lemon wedges for serving
Banana Nut Cake

Sift together flour, sugar, baking powder, baking soda, and salt
- 2 1/3 cups flour
- 1 2/3 cup sugar
- 1 1/4 tsp. baking powder
- 1 1/4 tsp baking soda
- 1 tsp. salt
- 2/3 cup soft shortening
- 2/3 cup buttermilk(1 tbsp. vinegar to milk)
- 1 1/4 cup banana mashed(about 3 or 4)
- 2 eggs
- 2/3 cup chopped nuts
Herb Crusted Salmon

Adjust oven rack to middle position and heat oven to 325 degrees
- 4 (6-8 ounce) skin on salmon fillets
- 2 tbsps. unsalted butter
- 1/2 cup panko bread crumbs
- 2 tbsps. beaten egg
- 2 tsps. minced fresh thyme
- 1/4 cup chopped fresh tarragon
- 1 tbsp. whole grain mustard
- 1 1/2 tsps. mayonnaise
- Lemon wedges
Chicken Marsala

Flatten chicken pieces between sheets of wax paper with rolling pin or wooden mallet
- 3 whole chicken breasts, split, skinned and beaten
- 1 egg, beaten
- 1/4 cup milk
- 1/2 cup flour
- 1 1/2 tsps. salt
- 1/4 tsp. pepper
- 3 tbsps. olive oil
- 3 tbsps. butter
- 1 small green pepper, cut into strips
- 1 small onion
- 1/2 lb. small mushrooms, cleaned and drained
- 1 clove garlic mashed
- 1 cup Marsala wine
- 1 cup chicken broth
- 1 lemon, cut into slices
Shrimp Spread

In a small bowl, combine the cream cheese, butter, and mayonnaise
- 1 pkg. (8oz) cream cheese, softened
- 1/4 cup butter softened
- 1/4 cup mayonnaise
- 1/2 lb. peeled and deveined cooked shrimp, finely chopped
- 1 medium onion, chopped
- Assorted crackers and/or fresh vegetables
Chicken Paprikash

Place flour, salt, and pepper into a large plastic bag
- 1/2 cup flour
- 1 tbsp. kosher or sea salt
- 3 tsps. freshly ground pepper
- 6 bone in chicken thighs (about 3 lbs.), skin on
- Vegetable oil
- 1 large yellow onion, thinly sliced
- 1 garlic clove, minced
- 4 plum tomatoes, peeled, cored,seeds discarded, chopped
- 4 Hungarian peppers (or substitute 2 bell peppers and 1 jalapeno), roughly chopped
- 2 tbsps. sweet paprika
- 1 1/2 cups low sodium chicken stock
- 3/4 cup sour cream
- Cooked rice or dumplings
- Fresh parsley, roughly chopped
