- 1 cup sliced vegetables(onion, tomato, and zucchini)
- 1 egg
- 2 egg whites
- salt and pepper to taste
- 1 tbsp. crumbled feta or grated Parmesan
Eggplant with Pasta

- Salt
- 1 pound penne or mezzani
- 4 1/2 cups Italian tomato sauce
- 1/4 cup olive oil or as needed
- 2 large eggs
- 1/2 cup flour
- 2 large firm eggplants, peeled and thinly sliced crosswise
- 3/4 cup grated Romano cheese
Apple Kugel

Cook noodles according to package directions
- 6 eggs, separated
- 4 tbsps. butter
- 1 1/2 cups sugar
- 4 tsps. cinnamon, use less
- 1 tsp. vanilla
- 1/2 tsp. lemon juice
- 1 lb wide egg noodles
- 6 medium apples, peeled, cored, sliced thin
- 1 cup white raisins
Broccoli Soup

In a large saucepan, saute onion in the butter until tender
- 1/4 cup chopped onion
- 2 tbsp. butter
- 2 cups chopped fresh broccoli
- 1 can(14 1/2 oz) reduced sodium chicken broth
- 1/2 tsp. garlic powder
- 1/4 tsp. pepper
- 1/8 tsp. salt
- sour cream, optional
Mini Chip Snowball Cookies

- 1 1/2 cups (3 sticks) butter, softened
- 3/4 cup powdered sugar
- 1 tbsp vanilla extract
- 1/2 tsp salt
- 3 cups all purpose flour
- 2 cups (12 oz pkg) Nestle Semi Sweet Choc. Mini Morsels
- 1/2 cup finely chopped nuts
- Powdered sugar
Apple Pastry

Prepare pastry 15 1/2 X 10 1/2 X 1" pan for 2-crest pie
- 1 beaten egg
- 1/4 c. heavy whip cream
- 1 1/4 c. flaked coconut
- 1/2 c. sugar
- Dash salt
- 1/2 c. firmly packed brown sugar
- 1/2 tsp. cinnamon
Roasted Tomato Soup

Preheat oven to 250 degrees
- 2 1/2 pounds fresh tomatoes (mix of fresh tomatoes, heirlooms, cherry, vine and plum)
- 6 cloves garlic peeled
- 2 small yellow onions sliced
- Vine cherry tomatoes for garnish, optional
- 1/2 cup extra virgin olive oil
- Salt and freshly ground pepper
- 1 quart chicken stock
- 2 bay leaves
- 4 tbsp. butter
- 1/2 cup chopped fresh basil leaves, optional
- 3/4 cup heavy cream, optional

- 3 Granny Smith Apples, halved and cut into 1/2 inch thick wedges
- 2 Macintosh apples, halved and cut into 1/2 inch thick wedges

- 3 cups all purpose flour
- 1 1/2 tsp. baking soda
- 1/4 tsp. kosher salt
- 1 1/8 tsp. cinnamon
- 4 large eggs
- 2 cups granulated sugar
- 1 cup vegetable oil
- 1/2 cup orange juice
- 2 1/2 tsp vanilla extract

Lemon, Parsley, & Parmesan Bread, Prosciutto & Egg

This dish is a good use for day old baguette or leftover Italian Bread
- 1 baguette(15 inches long)
- 5 large eggs
- 1 tsp. finely grated lemon zest
- 3 tbsps whole milk
- 1/4 cup roughly chopped flat leaved parsley leaves
- 1/2 cup grated Parmesan cheese
- Salt and pepper
- 4 slices thinly sliced prosciutto(2oz)

- 1/2 cup apple cider vinegar
- 1 tbsp. chopped fresh cilantro
- 1 tsp. kosher or sea salt
