Assemble this classic dip in glass jars for a single-serving appetizer
- 4.00 tablespoon(s) safflower oil
- 1.00 cup(s) plus 2 tablespoons chopped onion (from 1 medium onion)
- 4.00 clove(s) garlic, minced
- 2.00 can(s) (15 1/2 ounces each) pinto beans, drained, liquid reserved
- 2.00 medium tomatoes, finely chopped
- 1/2 teaspoon(s) coarse salt
- 2.00 ripe avocados, halved, pitted, and peeled
- 1.00 to 2 pickled jalapeno chiles, minced
- 1.00 cup(s) plus 2 tablespoons sour cream
- 2.00 tablespoon(s) fresh lemon juice
- 3.00 ounce(s) cheddar cheese, grated (1 cup)
- 6.00 scallions, thinly sliced

Nanny's Rolls

- 3 cups warm milk and water (1/2 and 1/2)
- 1/2 cup sugar
- 1 package Fleischman's dry yeast (2 1/4 tsp.)
- 1/2 cup melted margarine
- 1 tsp. salt
- 6 cups flour or more or less
Chocolate Fudge

Cook all ingredients except chocolate chips and vanilla, stirring over medium heat until mixture comes to a boil
- 1 package chocolate chips
- 2 cups white sugar
- 2/3 cup evaporated milk
- 12 large marshmallows (1 1/2 cup mini)
- 1/2 cup butter
- dash of salt
- 1 tsp. vanilla
Oven Fried Chicken

- 1 quart buttermilk
- 2 cups all-purpose flour
- 1 tablespoon kosher salt

- 2 cups prepared rotisserie chicken, chopped into small pieces
- 1/2 cup pecans, toasted and coarsely chopped
- 1/3 cup dried cranberries (cherry infused for an even more delicious chicken salad!)
- 2 stalks celery, thinly sliced
- 1/4 cup full fat mayonaise
- 2 tablespoons sour cream (fat free or light is great!)
- 1 tablespoon honey
- 1 and 1/2 teaspoons Dijon mustard
- 1 and 1/2 teaspoons poppyseeds
- 1 teaspoon freshly squeezed lemon juice
- Salt and pepper, to taste
- Croissants or other Sandwich Rolls (add some lettuce for a sandwich)
- Thinly sliced apples

Mango Almond Refrigerator Oatmeal

In a half pint jar or container, add oats, milk, yogurt, chia seeds, almond extract and honey
- 1/4 cup uncooked old fashioned rolled oats
- 1/3 cup skim milk
- 1/4 cup low-fat Greek yogurt
- 1-1/2 teaspoons dried chia seeds
- 1/4 teaspoon almond extract
- 1 teaspoon honey, optional (or substitute any preferred sweetener)
- 1/4 cup diced mango (approx. half of a small mango)
Chicken Fajitas

In a large resealable plastic bag, combine 2 tablespoons oil, lemon juice and seasonings; add the chicken
- 4 tablespoons canola oil, divided
- 2 tablespoons lemon juice
- 1-1/2 teaspoons seasoned salt
- 1-1/2 teaspoons dried oregano
- 1-1/2 teaspoons ground cumin
- 1 teaspoon garlic powder
- 1/2 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/2 teaspoon crushed red pepper flakes, optional
- 1-1/2 pounds boneless skinless chicken breast, cut into thin strips

Scalloped Potatoes in Pressure Cooker
