Fresh Tomato Sauce

- 3 tablespoons extra-virgin olive oil
- 4 cloves garlic , minced
- 2 pounds ripe beefsteak tomatoes (about 4 large),
- cored, peeled, and cut into 3/4-inch chunks
- Table salt
- 1/4 cup chopped fresh basil
- Ground black pepper
Buttermilk Pancakes II

In a large bowl, combine flour, sugar, baking powder, baking soda, and salt
- 3 cups all-purpose flour
- 3 tablespoons white sugar
- 3 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 3/4 teaspoon salt
- 3 cups buttermilk
- 1/2 cup milk
- 3 eggs
- 1/3 cup butter, melted
Potato Salad

1. Bring potatoes, 1 tablespoon salt, and enough water to cover by 1 inch to boil in large pot over high heat
- 3 pounds red potatoes, peeled and cut into 3/4-inch chunks

- 3/4 cup mayonnaise
- 1/2 cup buttermilk
- 1/4 cup white wine vinegar
- 1/4 cup drained jarred roasted red peppers, chopped fine
- 3 tablespoons finely chopped fresh cilantro leaves
- 3 scallions, chopped fine
- 1 garlic clove, minced
- 1/8 teaspoon dried dill
- 2 teaspoons pepper
- 2 tablespoons Dijon mustard
Boxty (Irish Potato Pancake) Recipe

Heat the oven to 200°F
- 2 pounds (3 to 4 large) Yukon Gold potatoes, peeled
- 3/4 cup whole milk
- 1 1/4 teaspoons fine salt, plus more for seasoning the potatoes before cooking
- 1 large egg
- 1/3 cup all-purpose flour
- 1/4 teaspoon freshly ground black pepper
- 1 to 2 tablespoons unsalted butter, cut into small pieces
Chicken Cheese Ring

Blend all ingredients. Form into 2-inch wide ring on a plate
- 1 can flakes of chicken (drained & flaked with fork)
- 3 cups grated cheddar cheese
- 1 pkg. cream cheese (softened)

- 1 cup shredded carrots
- 1 cup thinly sliced green pepper

Spaghetti Sauce and Meatballs

- Meatballs:
- Equal parts ground veal, pork and beef (2 packages)
- 2 eggs

- 1 cup bread crumbs
- 1/2 cup parmesan cheese
- 1 cup water
- Italian seasoning
- Sauce:
- 2 cans Primo or Unico plain spaghetti sauce
- 1 large can crushed or diced tomatoes
- 2-3 cloves garlic
- salt
- pepper
- Italian seasoning
- 1/2 - 3/4 cup parmesan cheese
Blueberry Maple Refrigerator Oatmeal

Directions In a half pint (1 cup) jar, add oats, milk, yogurt, chia seeds, and maple syrup
- 1/4 cup uncooked old fashioned rolled oats
- 1/3 cup skim milk
- 1/4 cup low-fat Greek yogurt
- 1-1/2 teaspoons dried chia seeds
- 2 teaspoons maple syrup (more or less to taste)
- 1/4 cup blueberries (or enough to fill jar)
