Asparagus with Hollandaise Sauce

- 4 egg yolks blended

Mix ingredients except shoestring potatoes Add shoestring just before serving
- 3 cans tuna
- 3 cups shredded carrots
- 1 cup diced celery
- 3/4 cup minced onion
- 1 cup mayonaise
- 3 cans shoestring potatoes
- 1 can water chestnuts
- 1 tbsp french dressing
Homemade Baileys Irish Cream

Combine all ingredients in a blender and set on high speed for 30 seconds
- 1 cup light cream (I used heavy whipping cream, which made it even richer)
- 14 ounces sweetened condensed milk
- 1 2/3 cup Irish whiskey (I used Jameson's)
- 1 teaspoon instant coffee
- 2 tablespoons chocolate syrup
- 1 teaspoon vanilla
- 1 teaspoon almond extract (I skipped this entirely)
Chicken and Pico De Gallo Mini Shells - Jackie

In a small bowl mix all ingred
- 1/2 cup cooked diced chicken
- 1 med. avacado diced
- 2 roma tomatoes, seeded and diced
- 2 TBSP. chopped green onion
- 2 tsp. chopped jalapeno pepper
- 2 TBSP. mayo
- 1 TBSP. vinegar
- 1-2 TBSP. chopped cilantro
- salt and pepper to taste.
- 1 box mini fillo shells (15 in a box)
Butternut squash

Preheat oven or toaster oven to 450F
- 1 large butternut squash, peeled and cut into pieces about 1 inch square (about 6 cups squash cubes)
- 2 T fresh thyme leaves (or use 1 T dried thyme)
- 2 T olive oil (or slightly less if desired)
- 2 tsp. fresh squeezed lemon juice
- 2 T freshly grated parmesan cheese

Make crust. In large mixing bowl combine cranberries and 1 cup sugar
- 1 1/2 cups graham cracker crumbs
- 1/2 cup chopped pecans
- 1/4 cup sugar
- 6 tbsp butter
- Combine ingredients and press into bottom and sides of spring form pan. chill
- 1 1/2 cup ground fresh cranberries

Brussels Sprouts Gratin with Caramelized Shallots

Directions: Preheat an oven to 375°F
- Ingredients:
- For the topping:
- 3 cups coarse fresh bread crumbs
- 3 Tbs. unsalted butter, melted
- 1 1/2 tsp. lemon zest
- 1/2 tsp. kosher salt
- 1/2 tsp. freshly ground pepper
- 2 Tbs. minced fresh flat-leaf parsley
- For the gratin:
- 1 Tbs. unsalted butter
- Kosher salt, to taste, plus 2 tsp.
- 2 lb. brussels sprouts, trimmed and halved lengthwise
- 2 Tbs. all-purpose flour
- 8 oz. Gruyère cheese, grated
- 1/2 oz. Parmigiano-Reggiano cheese, grated
- 1 tsp. lemon zest
- 3/4 tsp. freshly ground pepper
- 1 cup heavy cream
- 1 jar (8 oz.) caramelized shallots, liquid strained off
