- For the Salad Dressing:
- 3 tablespoons rice vinegar
- 1 1/2 tablespoons grapeseed or canola oil
- 1 teaspoon sesame oil
- 1 teaspoon honey
- 1 teaspoon grated fresh ginger
- 1 clove garlic, minced
- 1/8 tsp kosher salt and pepper
- For the chicken:
- 1/4 cup hoisin sauce*
- 1 tablespoon rice vinegar
- 2 teaspoons Sriracha sauce
- 2 tablespoons less sodium soy sauce*
- 1 teaspoon grated fresh ginger
- cooking spray
- 1 pound ground chicken
- 8 ounce can water chestnuts, drained and diced
- 2 tbsp chopped unsalted cashews
- 2 scallions, thinly sliced

- 1 head Boston or Bibb lettuce, chopped
- 1 romaine lettuce heart, chopped

Southwestern Egg Rolls

Rub 2 tablespoons oil over chicken breast
- Lime Cilantro Dip:
- 4 tbsp vegetable oil
- 2 skinless, boneless chicken breast half
- 4 tbsp minced green onion
- 4 tbsp minced red bell pepper
- 2/3 c frozen corn kernels
- 1/2 c black beans, rinsed and drained
- 4 tbsp frozen chopped spinach, thawed and drained

- A few notes:
- to sure to buy instant pudding and not cook and stir or you will have a lumpy mix.
- You can use Cool Whip instead of making homemade whip cream, but I find the texture works out better with the latter and can be left out at room temperature longer.
- These can be prepared and fully assembled two days in advance and kept covered in the refrigerator.

Asian Chicken Wraps

1. In large bowl, whisk together the peanut butter, warm water, soy sauce and vinegar until smooth
- 1/2 cup creamy peanut butter
- 1/2 cup warm water
- 2 tablespoons reduced-sodium soy sauce
- 2 tablespoons rice wine vinegar
- 1 clove garlic, finely chopped
- 1 scallion, chopped
- 1/2 rotisserie chicken, shredded (about 2-1/2 cups), from a 3-pound chicken
- 4 rectangular wraps or large tortillas
- 1/2 sweet red pepper, cored, seeds removed and thinly sliced
- 1/2 large cucumber, peeled, halved lengthwise and thinly sliced
- 1 cup mung bean sprouts

- 2 15 oz. cans black beans, drained & rinsed
- 1 can corn, drained or kernels from 3-4 ears
- 14 oz. can diced tomatoes
- 3 tsp taco seasoning
- 16 oz. medium salsa
- 1 c. crumbled tortilla chips
- 1 c. shredded cheddar
Mexican Radish Slaw
