Spicy Black Bean Soup

- 1 can black beans, divided
- 1 can petite diced tomatoes, divided
- 1/2 C Mexican light beer (Corona Light is what I had), divided
- 1/2 cup corn (if you can grill or dry roast it you get extra flavor points, but it's not necessary)
- 1 tablespoon chipotle seasoning
- 1 tablespoon cumin
- 1 tablespoon chopped pickled jalapenos
- 2 teaspoons garlic powder
- 1 teaspoon salt
Tortillo Soup (Awesome!)

Heat grill pan to high, drizzle oil on corn & place on grill
- Vegetable oil
- 3 ears corn on cob, fresh or frozen
- 1 poblano pepper, split & seeded
- 1 lb. chicken breast tenders
- 2 c. carrots, diced
- 1 tsp. poultry seasoning
- 1 tsp. cumin
- 1 tsp. garlic powder
- Salt & pepper
- 1 medium zucchini, diced
- 1 medium onion, chopped
- 3 cloves garlic, chopped
- 1-2 chipotle peppers in adobo sauce or fresh jalapenos
- 1 can black beans
- 1/2 tsp liquid smoke
- 1 28 oz. diced tomatoes
- 1 8 oz. can tomato sauce
- 3 c. chicken stock
- 4 c. blue corn tortilla chips, broken into large pieces
- 1 c. shredded Cheddar or pepper-jack cheese
- 1/2 c. sour cream
- 2-3 Tbs. fresh cilantro
- 1 avocado
Tortellini and Sausage in Gorgonzola Cream Sauce

Boil water in a large pot to boil the tortellini according to package directions
- 1 link Johnsonville® Three-Cheese Italian Style Sausage (from 13.5 oz. pkg.), thinly sliced
- 2 tablespoons olive oil
- 1 medium onion, cut into 1/4-inch dice
- 1 (8 ounce) package baby bella or white mushrooms, thinly slices
- 1/4 teaspoon crushed red pepper flakes
- 1/8 teaspoon cayenne pepper
- 1/2 cup white wine (pinot grigio or chardonnay)
- 1 (15 ounce) jar Classico® Alfredo Sauce (or Classico® Alfredo Lite)
- 1 cup freshly grated fontina cheese
- 1/2 cup crumbled Gorgonzola cheese
- 1/3 cup shredded mozzarella cheese
- 2 (9 ounce) packages cheese tortellini (or other variety)
- 1/4 cup chopped Italian parsley
Bourbon Pecan Chews

Whisk together flour, allspice, and salt in a small bowl; set aside
- 2 cups all-purpose flour
- 1/2 teaspoon ground allspice

- 2 garlic cloves, minced
- 1 teaspoon soy sauce
- 1/4 cup cashews, chopped
- Salt and pepper to taste
