Heat 2 teaspoons vegetable oil in a large lidded skillet or wok over medium-high heat until it shimmers
- 9 teaspoons vegetable oil, divided
- 1 red bell pepper, cut into strips
- 1/2 medium onion, sliced
- 1 (6 ounce) skinless, boneless chicken breast half, cut into cubes
- 2 cups chopped zucchini
- 2 cups chopped carrots
- 1 cup chopped cabbage
- 1 cup chopped sugar snap peas
- 1/3 cup low-sodium chicken or vegetable broth
- 1 1/2 tablespoons minced garlic
- 1 tablespoon minced fresh ginger
- 2 cups cooked short-grain brown rice
- 2 tablespoons low-sodium soy sauce
- 2 teaspoons sesame oil
- 1/4 cup sliced green onions
- 1/2 teaspoon salt

- 1 ounce hot chile paste
- 1 teaspoon distilled white vinegar
- 2 teaspoons brown sugar
- 4 green onions, chopped
- 1 tablespoon chopped garlic
- 1 (8 ounce) can water chestnuts
- 4 ounces chopped peanuts
Waldorf Salad

- 1 slightly heaping cup raw pecans or raw pecan pieces
- 2 cups whole wheat pastry flour
- 1/2 cup powdered sugar
Whiskey-Glazed Sweet Potatoes

- 3 pounds sweet potatoes (about 4 large)
- 1 cup pecans
- 4 tablespoons unsalted butter, plus more for preparing baking dish
- 3/4 cup agave syrup, preferably amber
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon cayenne pepper

Mexican Street Corn Pasta Salad

Cook the pasta according to package directions
- Salad
- 2 cups miniature farfelle pasta uncooked
- 3 cups either 2 (15-ounce) cans, or 3-4 corns on the cob)
- 1 large avocado
- 3 green onions
- 1/2 bunch cilantro
- 1 tablespoon finely chopped jalapeno
- 6-8 strips hardwood smoked bacon
- 1/2 cup Cotija cheese (or queso fresco or feta -- add cheese to preference (we like 1/2 cup)
- Optional: 1/2 canned cup black beans
- Dressing
- 1/2 cup full fat regular mayo no substitutes
- 3 tablespoons freshly squeezed lime juice and 1/4 teaspoon lime zest
- 1/8 teaspoon ground cumin
- 1/4 teaspoon paprika
- 1/2 teaspoon chili powder
- 1 teaspoon Sriracha or hot sauce
- Pinch of salt and ground black pepper
Loaded Creamed Corn with Tomato and Bacon

- 4 12 ounce packages frozen whole kernel corn, thawed
- 1 1/2 cups half-and-half or light cream
- 1 cup chopped onion (1 large)
- 1/2 cup freshly grated Parmesan cheese
- 1/4 cup butter, cut up
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 5 thick slices bacon
- 3/4 cup shredded Monterey Jack cheese with jalapeno peppers or Monterey Jack cheese (3 ounces)
- 1-2 jalapeno peppers, minced
- 1/2 cup chopped tomato (1 medium)
