Black Bean Soup

Place vegetable stock, beans, garlic, lime juice, jalapeño pepper, and seasonings into pot
- 3 cups low sodium vegetable stock
- 1 1/2 cups canned, drained and rinsed black beans (1/2 beans reserved)
- 1 1/2 cups canned, drained and rinsed white beans (1/2 beans reserved)
- 3 garlic cloves, roasted
- 1/4 cup fresh cilantro
- 3 Tablespoons lime juice
- 1 jalapeño pepper, seeded
- 1 teaspoon ground cumin
- 1/4 teaspoon Kosher salt
- Fresh cilantro for garnish
Fire-Roasted Corn Salad

Brush corn with oil and grill over medium high heat for 10 minutes turning occasionally
- 6 ears of corn - shucked and cleaned
- 2 Tbs. olive oil
- 1 Tbs. Chili Lime seasoning
- 2 tomatoes diced
- 1 avocado peeled, pitted and diced
- 1 can black beans, drained
- 2 Tbs. fresh cilantro chopped
- Juice of 1/2 lime
- Salt and pepper to taste
Texas German Potato Salad

Place the potatoes into a large pot and fill with enough water to cover
- 2 pounds red potatoes, scrubbed
- 1 (12 ounce) package sliced bacon
- 2 cups sour cream
- 2 tablespoons light mayonnaise
- 2 tablespoons prepared yellow mustard
- 1 bunch green onions, chopped
- 3/4 cup chopped green olives
- 5 hard-cooked eggs, chopped
- 1 pinch Italian seasoning
- 2 tablespoons ranch salad dressing
- 1 pinch paprika, as garnish
Zucchini Parmigiana

- 1 c tomato sauce
- 1 tsp. Italian seasoning
- 1/2 c grated mozzarella cheese
- 3 zucchini, thickly sliced
- 3 tbsp. grated Parmesan Cheese
Ultimate Grilled Cheese

Preheat the oven to 400 degrees F
- 12 slices thick-cut bacon, such as Nodine's applewood smoked
- 1 cup good mayonnaise
- 1/4 cup dijon mustard
- 1/4 cup freshly grated parmesan cheese
- Kosher salt and freshly ground black pepper
- 1 white pullman loaf or sourdough bread, sliced 1/2 inch thick (12 slices)
- 6 tablespoons salted butter, at room temperature
- 6 ounces aged gruyere or comte cheese
- 6 ounces extra-sharp cheddar, such as Cabot or Shelburne Farms
Refried Black Beans

Drain the soaked beans and add to a pot
- 1 pound dried black beans, soaked overnight in cold water
- 4 cloves garlic, minced
- 1 large onion, diced
- 1/2 teaspoon ground cumin
- Salt and freshly ground black pepper
- 1 tablespoon unsalted butter
Mexican Black Bean Wrap

Mix all ingredients, except tortilla, together in bowl
- 3/4 cup canned black beans, drained, rinsed & mashed
- 2 Tbs sour cream
- Several dashes hot sauce
- 1/4 cup shredded smoked cheddar cheese
- Several pickled or fresh jalapeno slices
- 2 Tbs crumbled cooked bacon
- Chopped cilantro
- 10-12 inch soft tortilla or wrap
Teriyaki Chicken (Instant pot)

Add brown sugar, soy sauce, pineapple, ginger and garlic to pressure cooker; stir to combine
- ¼cup packed dark brown sugar
- 3Tbsp. soy sauce
- ¼cup crushed pineapple
- 1Tbsp. minced fresh ginger
- 2large garlic cloves, minced
- 2lb. boneless, skinless chicken thighs
- Rice, for serving
- Steamed vegetables, for serving

Burger Sauce

Whisk together the mayonnaise, ketchup, mustard, onion, garlic, and vinegar in a bowl
- 1 cup mayonnaise
- 1/2 cup ketchup
- 1/4 cup prepared yellow mustard
- 2 teaspoons dried minced onion
- 1/4 teaspoon dried minced garlic
- 1/8 teaspoon white vinegar
- hot sauce to taste
- seasoned pepper to taste

- 2 plum tomatoes, halved, seeded, and diced small
- 1/4 teaspoon chopped fresh oregano leaves

- 5 ounces fresh mozzarella, torn into 1-inch pieces
