Fiesta Popcorn Mix

Pop ½ cup popcorn kernels and preheat oven to 325 degrees
- 3 tbs. chili powder
- 2 tbs. salt
- 1 tbs. cumin
- 1 1/2 tsp. onion powder
- 1 1/2 tsp. smoked paprika
- 1/2 tsp. oregano
- 1/2 tsp. black pepper
- 6 tbs. cocoa powder
- 3/4 tsp. salt
- 3/4 tsp. cinnamon
- 3 tbs. ground ginger
- 2 tbs. cinnamon
- 1 tbs. nutmeg
- 2 tsp. salt
Barbecue Beef, Bacon, Bean Casserole

STIR all of the sauce ingredients together in a heavy-bottomed saucepan over medium high heat
- For the Sauce (Optional: can replace homemade sauce with 3 cups of KRAFT Barbecue Sauce):
- 1/2 cup brown sugar
- 1/2 cup HEINZ Tomato Ketchup
- 1 Tbsp. cider or white wine vinegar
- 1 tsp. dried mustard powder
- 1/4 tsp. liquid smoke (optional)
- 1 cloves garlic, peeled and minced or pressed
- freshly ground black pepper to taste
- For the Casserole:
- 1/2 bottle KRAFT Original Barbecue Sauce
- 1 lb. of OSCAR MAYER Bacon
- 1 lb. lean ground beef, venison or elk
- 1/2 small onion, peeled and finely chopped (or 1 1/2 teaspoons onion powder)
- 3 cups (or 2 cans drained) butter beans
- 3 cups (or 2 cans with liquid) kidney beans
- 2 cups (or 1 can with liquid) pork and beans
Bacon Wrapped Cream Cheese Chicken

Set oven to 325 degrees F
- 8 boneless skinless chicken breasts
- 1 (8 ounce) package cream cheese with chives (sliced into 8 even squares)
- 16 slices bacon (cooked but not until crisp)
- 2 (10 ounce) cans cream of chicken soup
- 2-3 tablespoons grated parmesan cheese
- 1 small onion, finely chopped (about 1/4 cup)
- 3 ⁄4 cup milk
- 1 ⁄2 cup sour cream
- 1 ⁄2 cup mayonnaise (or use all sour cream or mayo)
- 1 ⁄4 teaspoon white salt (to taste)
- black pepper
- grated cheddar cheese, to taste (optional)
Bacon-Wrapped Jalapeno Chicken Bites

1. Dab 1/2 teaspoon (more or less) of cream cheese on top of each chicken tender
- 8 chicken tenders, flattened and cut in two
- 3-ounce package softened cream cheese
- 1 jalapeno pepper, seeded and finely chopped
- 8 slices bacon, cut in half

1. Heat the oven to 375 degrees and line a cookie sheet with foil (for easy clean-up)
- Lime-cilantro yogurt (serves 4):
- 1/3 pound boneless skinless chicken breasts (about 2)
- 1 cup buttermilk
- 2 cups Doritos crumbs (about 5 ounces)
- 3 tablespoons chile powder
- 1 teaspoon cumin
- 4 cups cooked brown rice
- 2 cups black beans
- 2 cups corn
- Lime-cilantro yogurt, recipe follows
- Lime wedges, for serving
- Chopped cilantro, for serving
- 11 ounces Greek yogurt
- A big handful of fresh cilantro
- 1 clove garlic
- Juice of 1 lime (about a teaspoon)

Pumpkin Sheet Cake with Cream Cheese Frosting

- 2 cups sugar
- 1 cup vegetable oil
- 4 eggs, beaten
- 2 cups flour
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 1/4 tsp. nutmeg

- Cream Cheese Frosting:
- 5 Tbs. butter, softened
- 3 oz cream cheese, softened
- 1 tsp. vanilla
- 1 3/4 cups powdered sugar
- 3-4 tsp. milk

Jalapeno Popper Stuffed Chicken Breast

Preheat oven to 350 Degrees Make a slit in the middle of each of the chicken breast, about an inch long
- 2 boneless chicken breast
- 6 oz. cream cheese, softened
- 3/4 c. Monterrey Jack Cheese
- 1/3 c. jalapeno peppers, diced and deseeded
- 1 c. flour
- 2 eggs, whisked
- 2 c. plain bread crumbs
- olive oil
- salt and pepper
- butcher twine or toothpicks
Avocado Salad Dressing

- 1 large or 2 small avocados
- 1 c. low-fat plain yogurt
- 1-2 Tbs. fresh cilantro or parsley, chopped
- 2 Tbs. fresh lemon juice
- Salt to taste
- Pepper to taste

- 2 cups water
- 1 cup quinoa, rinsed and drained
- 1/2 teaspoon salt
- 1 1/2 cups marinara sauce
- 2 tablespoons tomato paste
- 2/3 cup finely shredded Parmesan cheese
- 1/3 cup whipping cream
- 1/2 teaspoon crushed red pepper
- 1/4 teaspoon ground black pepper
- 1 1/2 cups fresh mushrooms, halved & sauteed in butter
- 1 cup shredded part-skim mozzarella cheese (4 ounces)
- 3/4 cup shredded fresh basil
- 6 ounces fresh mozzarella, cut into 1/2-inch cubes
