Chocolate, Cranberry & Oat Bars

HEAT oven to 350ºF. MICROWAVE cranberries and orange juice in microwaveable bowl on HIGH 30 sec
- 1 cup dried cranberries
- 1/4 cup orange juice
- 1-1/2 cups flour
- 1-1/2 cups quick-cooking oats
- 1 tsp. CALUMET Baking Powder
- 1/4 tsp. salt
- 3/4 cup margarine, softened
- 1-1/2 cups packed brown sugar
- 2 eggs
- 4 squares BAKER'S Semi-Sweet Chocolate, coarsely chopped
- 1/2 cup chopped PLANTERS Pecans
Texas Spicy Black Bean Chowder

In a 4-quart Dutch oven melt butter over medium heat
- 2 tablespoons butter
- 1 cup chopped onion
- 3/4 cup chopped red sweet pepper
- 2 cups chopped round red potatoes
- 1 15 ounce can black beans, rinsed and drained
- 1 cup frozen corn
- 2 4 ounce cans chopped green chiles
- 4 cups reduced-sodium chicken broth or vegetable broth
- 1 1/2 teaspoons chili powder
- 1/2 teaspoon ground cumin
- 1 cup half-and-half
- 3 tablespoons all-purpose flour
- 2 cups shredded cheddar or Monterey Jack cheese (8 ounces)
- 2 tablespoons snipped fresh cilantro
- Chopped fresh tomato (optional)
Sunny Chicken Salad

Wipe insides of tomatoes with paper towels
- 1 6oz. can chicken drained well
- 2 Tbs. lime juice, (1 small lime)
- 1 Tbs. fresh cilantro + 1 tsp. extra
- 1/2 tsp sunny paris seasoning
- 1 Tbs. mayonnaise
- 1/4 tsp hot sauce
- 2 tomatoes, cored & seeded
Zombie Punch

Combine all ingredients excet bitters & nutmeg in large saucepan; bring to a boil over medium-heat
- 6 c. apple cider
- 11/2 c.aged dark rum
- 12 orange slices
- 12 whole allspice
- 6 cinnamon sticks
- Angostura bitters
- Nutmeg
Blue Cheese & Bacon Mashed Potatoes

- Mashed potatoes
- 6 slices cooked & chopped bacon
- 4 oz. crumbled blue cheese
Sheet-Pan Apple Spice Pancake

Make the pancake: Preheat the oven to 450 degrees F
- 1/3 cup granulated sugar
- 1/3 cup packed light brown sugar
- 2 teaspoons apple pie spice
- 3 tablespoons unsalted butter, at room temperature
- 3 Golden Delicious or Gala apples, peeled, cored and sliced into 1/4- to 1/2-inch-thick rounds
- 1 3/4 cups all-purpose flour
- 1 cup whole-wheat flour
- 1 tablespoon baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 cups whole milk
- 3/4 cup whole-milk Greek yogurt
- 2 large eggs
- 1 1/2 teaspoons pure vanilla extract
- 1 cup confectioners' sugar
- 5 teaspoons apple cider
- 1/4 teaspoon apple pie spice
- Maple syrup and/or whipped cream, for serving
Sweet Potato Salad

1. Cut sweet potatoes into bite-size chunks
- 3 large sweet potatoes
- 1 bunch scallions (about 6), trimmed and thinly sliced
- 2 celery stalks, chopped
- 1/4 cup minced fresh parsley
- 1/3 cup reduced-fat mayonnaise
- 1/4 cup nonfat buttermilk
- 2 tablespoons fresh lemon juice
- 1 Tbs pickle relish
- 2 teaspoon Dijon mustard
- Salt and freshly ground black pepper to taste
Baked Chili Fries

Preheat the oven to 400 degrees F
- 6 large jalapeno peppers
- 4 large poblano peppers
- 1 cup all-purpose flour, plus 2 tablespoons
- 3 large eggs, beaten
- 1/4 cup milk
- 2 tablespoons spicy mustard (recommended: Gulden's)
- 1 cup bread crumbs
- 1/2 cup grated Parmesan or Romano
- Salt and freshly ground black pepper
Smoked Sausage and Baked Bean Soup

Heat the vegetable oil in a large pot or Dutch oven over medium-high heat
- 1 tablespoon vegetable oil
- 20 smoked cocktail sausages (half of a 14-ounce package), halved
- 2 stalks celery, diced
- 1 carrot, diced
- 1 small onion, chopped
- Kosher salt and freshly ground pepper
- 1 14 -ounce can cherry tomatoes
- 1 15 -ounce can white beans (do not drain)
- 1 8 -ounce can baked beans
- 2 cups low-sodium chicken broth
- 2 tablespoons roughly chopped fresh parsley
- 1 cup shredded cheddar cheese (about 4 ounces)
