Beat the 2 packages of pudding mix with milk in a bowl using an electric mixer until thickened, about 2 minutes
- 2 (3.9 ounce) packages instant chocolate pudding mix
- 2 cups milk
- 2 cups frozen whipped topping, thawed
Berbere Cheesy Toast

Preheat oven to low broil
- 1 dense seeded sourdough loaf, sliced-about 12 slices
- 2 TB. olive oil
- 1 large onion, thinly sliced
- 1/2-1 tsp. BERBERE
- 1/4 tsp. salt
- 1 12-oz. bag spinach
- 1 Cup grated Parmesan or Romano cheese
- 1 Cup mayonnaise, regular or light (fat free doesn't work very well)
- 1/4 tsp. PENZEYS FRESHLY GROUND PEPPER
- 1/4 tsp. TURKISH OREGANO

- 2 teaspoons baking powder

Using a stand mixer with paddle or whisk attachment, cream the margarine and shortening together
- 1/2 cup margarine, softened (I like Earth Balance)
- 1/2 cup shortening
- 1/2 cup unsweetened cocoa powder (dutch processed if you have it)
- 3 cups powdered sugar, sifted
- 1/4 cup soymilk or 1/4 cup rice milk or 1/4 cup coconut milk or 1/4 cup almond milk
- 2 teaspoons vanilla extract (or extract of your choice, match to the flavor you want) (optional)
