Tequila, Mexican Cream & Chipotle Shrimp

Peel and devein the shrimp
- 1 pound large shrimp in shell (about 25 per pound), thawed, peeled and deveined
- 1/2 teaspoon kosher or sea salt, or more to taste
- 1/4 teaspoon freshly ground black pepper
- 2 tablespoons unsalted butter
- 1 garlic clove, finely minced
- 1/4 cup Tequila Reposado
- 1/4 cup Mexican style cream (such as Rio Grande)
- 1 teaspoon chipotles in adobo sauce, or add more to taste
- 1 bunch chives, chopped
Sweet Potato and Black Bean Salad

Preheat oven to 400F. Coat a baking sheet with nonstick cooking spray
- 4 medium sweet potatoes, peeled and cubed
- 1 medium red onion, chopped
- 4 tablespoons olive oil
- 2 medium jalapeños, seeded and roughly chopped
- 1 garlic clove
- Juice of 2 medium limes
- 1 (15-ounce) can black beans, rinsed and drained
- 1 medium red bell pepper, finely chopped
- 1 teaspoon salt
- Freshly ground black pepper
- 1/3 cup chopped cilantro
Caramelized Upside Down Apple Cake

Preheat oven to 375F
- Apples:
- 1/4 cup (1/2 stick) butter
- 3/4 sugar
- 1/4 cup sorghum (optional)
- 3 to 4 cups crispy, tart apples or pears, peeled, cored and cut into wedges
- Cake:
- 1/2 cup (1 stick) butter, room temperature
- 2/3 cup sugar
- 1 teaspoon vanilla extract
- 2 eggs
- 1 1/2 cups all-purpose flour
- 1/2 cup cornmeal
- 1 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 teaspoon cinnamon
