Salsa & Pico Whole Potato Salad

This is a versatile side that tastes great warm or cold
- 3 lbs. small new red potatoes
- 1/2 Cup olive oil
- 1/4 Cup red wine vinegar
- 1 TB. sugar
- 1 tsp. salt
- 2 TB. SALSA & PICO SEASONING
- 1-2 tsp. CILANTRO (optional)
- 1 tsp. PENZEYS MINCED GARLIC (optional)
- 1/4 tsp. CHIPOTLE PEPPER (optional)
- 1-2 TB. olive or vegetable oil

- For the jalapeno popper topping:
- 6 skinless, boneless chicken breast
- 3 slices bacon, diced
- 2 jalapenos, deveined, deseeded and diced
- 1/4 cup diced onion
- 1 (8-ounce) package cream cheese, softened
- 1/2 cup mayonnaise or Greek yogurt
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Parmesan cheese
- For the topping:
- 1/2 cup crushed butter crackers (1/2 sleeve)
- 1/2 cup Parmesan cheese
- 4 tablespoons butter, melted
Asian Noodle Salad

Mix salad ingredients together
- SALAD INGREDIENTS:
- 1 package Linguine Noodles, Cooked, Rinsed, And Cooled
- 1/2 head Sliced Napa Cabbage, Or More To Taste
- 1/2 head Sliced Purple Cabbage, Or More To Taste
- 1/2 bag Baby Spinach, Or More To Taste
- 1 whole Red Bell Pepper, Sliced Thin
- 1 whole Yellow Bell Pepper, Sliced Thin
- 1 whole Orange Bell Pepper, Thinly Sliced
- 1 bag Bean Sprouts (also Called Mung Bean Sprouts)
- Chopped Cilantro, Up To 1 Bunch, To Taste
- 3 whole Scallions, Sliced
- 3 whole Cucumbers Peeled And Sliced
- 1 can (about 10 Oz.) Whole Cashews, Lightly Toasted In Skillet

- FOR THE DRESSING:
- 1 whole Lime, Juiced
- 8 Tablespoons Olive Oil
- 8 Tablespoons Soy Sauce
- 2 Tablespoons (up To 3 Tablespoons) Sesame Oil
- 1/3 cup Brown Sugar
- 3 Tablespoons Fresh Ginger Chopped
- 2 cloves Garlic Chopped
- 2 whole Hot Peppers Or Jalapenos, Chopped
- Chopped Cilantro
Vegetable Soup

Heat the olive oil in a large stockpot
- 1/4 Cup olive oil
- 1 large onion, peeled and sliced
- 1-2 ribs celery, sliced
- 2 large carrots, peeled and sliced into rounds
- 1 potato, peeled if desired and cubed
- 1 &1/2 cups green beans, cut into 1-inch pieces
- 1 small cabbage, cored and chopped
- 1 stalk broccoli, sliced
- 3 medium tomatoes, chopped
- 1 bell pepper (any color), seeded and chopped
- 1 zucchini or yellow squash, sliced into rounds and cut in half
- 5 Cups vegetable broth
- 1 whole bay leaf
- 1/4 Cup chopped fresh parsley
- 1 tsp. margoram
- 1 tsp. thyme
Mexican Chicken Tenders

Heat oven to 400°F. Spray large cookie sheet with cooking spray
- 1 package (1 oz) Old El Paso™ taco seasoning mix
- 1 egg
- 1 cup plain panko crispy bread crumbs
- 1 package (14 oz) uncooked chicken tenders (not breaded)
- 1/2 cup salsa
Loaded Potato Casserole

Combine first 4 ingredients, mix in hash browns
- 2 (16oz) containers sour cream
- 2 cups cheddar cheese, shredded
- 2 (3oz) bags real bacon bits
- 2 packages Ranch Dip mix
- 1 large (28 - 30oz) bag frozen hash brown potatoes - shredded kind
Stuffed Cranberry Sauce

In bowl, beat together cream cheese & mayonnaise until creamy
- 1 8oz. container whipped cream cheese
- 2 Tbs. mayonnaise
- 1/2 c. finely chopped pecans
- 2 cans jellied cranberry sauce, chilled
Peanut Butter Frozen Pie (Sharon's)

Beat cream cheese and powdered sugar together until smooth
- 2 8oz Cool Whip
- 8 oz cream cheese
- 1 1/2 cups powdered sugar
- 1 1/4 cups peanut butter
- 1 cup milk 2 graham cracker or pretzel crusts
- Dark chocolate shavings or dark chocolate syrup
Apple Pie Slices

Preheat oven to 375°. In a large bowl, combine the flour, shortening and salt
- Crust:
- 2 Cups flour
- 3/4 Cup shortening
- 1 tsp. salt
- 1 egg yolk, lightly beaten
- 1/2 Cup milk
- Filling:
- 5 Cups sliced, peeled apples (6-7 good sized apples)
- 1 Cup sugar (more sugar may be needed if your apples are tart) we used 3/4 Cup sugar and 1/4 Cup VANILLA SUGAR
- 2 TB. flour
- 1/2 tsp. PENZEYS CINNAMON
- 1 TB. butter
- 1 egg white, lightly beaten
- double or triple the recipe depending on how much icing you prefer
- Icing:
- 1 TB. butter, melted
- 3/4 Cup powdered sugar
- 1/4 tsp. PURE VANILLA EXTRACT
- 2-3 tsp. milk
Chipotle Chili with Sweet Potatoes and Brussels Sprouts

- 1 teaspoon olive oil
- 1 red onion, diced small
- 4 cloves garlic, minced
- 1 tablespoon coriander seeds, crushed
- 2 teaspoons dried oregano
- 3 chipotles in adobo, seeded and chopped (we only used 2 and it was plenty spicy for us)
- 1 1/2 pounds sweet potatoes (2 average-size), peeled and cut into 3/4-inch pieces
- 12 ounces Brussels sprouts, quartered lengthwise (about 2 cups)
- 2 teaspoons ground cumin
- 1 tablespoon chili powder
- 1 (28-ounce) can crushed tomatoes
- 1 cup water
- 1 (16-ounce) can pinto beans, drained and rinsed (about 1 1/2 cups)
- 1 1/2 teaspoons salt
- Freshly squeezed lime juice
