Asian Pork and Cabbage Salad

For dressing, in a small bowl stir together orange marmalade, soy sauce, vinegar, toasted sesame oil, and garlic
- 1/4 cup low-sugar orange marmalade or low-sugar apricot preserves
- 2 tablespoons reduced-sodium soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon toasted sesame oil
- 1 clove garlic, minced
- Nonstick cooking spray
- 12 ounces boneless pork loin chops, cut into bite-size pieces
- 1 medium red or yellow sweet pepper, cut into thin bite-size strips
- 6 cups napa cabbage, shredded
- 1 cup chopped cucumber
- 4 green onions, bias-sliced into 1-inch pieces
- 1/4 cup slivered almonds, toasted
Fried Smashed Potatoes

Place potatoes in a large saucepan and cover with at least 1 inch of water
- 12 - 16 small red potatoes (1-1/2 to 2 inches in diameter; 1-1/2 to 2 pounds total)
- 1 teaspoon salt
- 1/4 cup olive oil
- 3/4 teaspoon salt
- 1/2 teaspoon ground black pepper
- 3/4 cup freshly grated Parmesan cheese
- 2 tablespoons finely chopped fresh Italian (flat-leaf) parsley
Maple Glazed Short Ribs-Crock Pot

Place ribs in a single layer in a 5-7 quart slow cooker
- Alternate rub if you cannot get Taste of Inspirations:
- 8 meaty beef short ribs
- 1/2 cup maple syrup
- 1/2 cup brown sugar
- 1 tsp ground sage
- 1 tsp ground thyme
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 tsp ground ginger
- 1/2 tsp garlic powder
- 1/2 tsp maple extract
- pinch of nutmeg
Chicken and Avocado Salad with Lime and Cilantro

Shred the chicken apart until you have 2 cups of chicken shredded into fairly large chunks
- 2 cups cooked chicken, shredded into large pieces
- 2 medium avocados, diced
- 1 T + 1 T fresh squeezed lime juice
- salt, to taste (I didn't use too much salt because you can always add more at the table.)
- 1/4 cup thinly sliced green onion
- 1/2 cup finely chopped fresh cilantro (or chop it more coarsely if you prefer)
- 2 T mayo or light mayo

PUMPKIN NUT CAKE

Cream eggs, pumpkin, oil, sugar, and vanilla with mixer
- Cake:
- 3 eggs
- 1 (15 ounce) can 100% pumpkin (Not the pumpkin pie mix)
- 3/4 cup oil
- 1 1/2 cups sugar
- 1 teaspoon vanilla flavoring
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 2 teaspoons cinnamon
- 1 cup walnut pieces
- Nutmeg Frosting:
- 1 (8 ounce) package cream cheese, softened
- 1 stick butter or margarine, softened
- 2 cups confectionery sugar
- 1 teaspoon nutmeg
- 1 teaspoon vanilla flavoring

- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder

- 2 Cups Ice Cream, any flavor, softened
Apple Crisp

Preheat oven to 375 degrees
- 4 cups sliced apples into 12 wedges each
- 1/2 cup packed light brown sugar
- 1/2 cup sugar
- 1/2 cup regular oats
- 1/2 cup all-purpose flour
- 1 1/2 teaspoons cinnamon
- 1/2 cup butter, softened
- 12 crushed shortbread cookies (about 1 cup)
Sundried Tomato Pasta Salad

Dressing: In a blender combine sundried tomatoes, garlic, salt, pepper, and vinegar until tomatoes are chopped

- 1 jar Kalamata Or Assorted Olives
- 1 pint Ripe Cherry Tomatoes (cut In Halves)
