Beef Roast & Vegetables (Karen's)

Combine small amount of flour, salt & pepper & flour all sided of roast
- 1 chuck roast
- Baby carrots
- Baby yukon potatoes
- 1-1/4 cups red wine
- 2 cans cream of mushroom soup
- 1 pkg dry onion soup mix
Cilantro Lime Chicken Thighs

Preheat your oven to 375 degrees F
- 8 chicken thighs, bone in, skin on
- Olive oil
- 6 garlic cloves, roughly chopped
- 1 cup dry white wine
- 2 limes, juice of
- 2 cups chicken broth
- 1 bunch cilantro, stems removed, chopped; more for garnish
- Olive oil
- 1 tbsp seasoned salt
- 1 tsp hot paprika
- 1 tsp black pepper
- 1 tbsp garlic powder
- 1/2 tsp ground nutmeg
Black Beans

1. Place beans in a colander and rinse well
- 1 cup dry black beans
- 3 1/2 cups water
- 2 tablespoons canned diced green chiles
- 1/4 cup picante sauce (such as Pace)
- 1 1/2 teaspoons dried oregano or 1 tablespoon fresh
- 1 teaspoon minced garlic
- 1 teaspoon chili powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Ice Cream Bread

1. Preheat oven to 350 F
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 Tbs sugar
- 2 cups ice cream, softened (Use full-fat ice cream!)
- Optional: add nuts, chips, etc
Hot Pizza Dip

In a small bowl, mix together the cream cheese, oregano, parsley, and basil
- 1 (8 ounce) package cream cheese, softened
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried parsley
- 1/4 teaspoon dried basil
- 1 cup shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 1 cup pizza sauce
- 2 tablespoons chopped green bell pepper
- 2 ounces pepperoni sausage, chopped
- 2 tablespoons sliced black olives
Ramen Noodle Frittata

Bring a medium saucepan of water to a boil
- 1 3-ounce package ramen noodles (seasoning packet discarded)
- 1 1/2 teaspoons toasted sesame oil
- 2 tablespoons vegetable oil
- 8 ounces ground chicken
- 1 tablespoon oyster sauce
- Kosher salt and freshly ground pepper
- 2 cups shredded coleslaw mix
- 6 scallions, chopped
- 8 large eggs
- 2 tablespoons pickled ginger, sliced into thin strips
- 12 ounces baby bok choy, halved lengthwise
Biscuits

Put the Biscuit mix and sour cream in a bowl and mix well
- 4 cups Pioneer biscuit mix
- 2 cups of sour cream
- 1 can of 7up or Sprite
Lettuce Wraps from PF Changs

Mix all ingredients for "cooking sauce" and set aside
- MARINADE:
- 1 1 1 teaspoon cornstarch
- 2 2 2 teaspoons sherry wine or red wine
- 2 2 2 teaspoons water
- 2 2 2 teaspoons soy sauce
- FILLING INGREDIENTS:
- 1 1/2 1 1/2 1/2 lbs boneless skinless chicken breasts, diced small
- 5 5 5 tablespoons vegetable oil or peanut oil
- 1 1 1 teaspoon minced fresh ginger or grated ginger
- 2 2 2 teaspoons garlic, minced
- 1/2 1/2 1/2 cup green onions, minced
- 1 1 1 cup shiitake mushrooms, minced
- 1 1 ounce) can 1 (8 ounce) can bamboo shoots, minced
- 1 1 ounce) can 1 (8 ounce) can water chestnuts, minced
- COOKING SAUCE:
- 1 1 1 tablespoon hoisin sauce
- 1 1 1 tablespoon soy sauce
- 1 1 1 tablespoon sherry wine or red wine
- 2 2 2 tablespoons oyster sauce
- 2 2 2 tablespoons water
- 1 1 1 teaspoon sesame oil
- 1 1 1 teaspoon sugar
- 2 2 2 teaspoons cornstarch
- lettuce leaves, washed and taken off the head but left whole
Artichoke Dip

Mix all ingredients together
- 1 can quartered artichoke hearts, drained & chopped
- 1 jar marinated artichoke hearts, drained & chopped
- 1 small onion, chopped
- 1-2 cloves garlic
- 1 c. mayonnaise
- 1 c. Parmesan cheese
Chinese Chicken Salad

- 1-1/4 pounds chicken tenders
- 1/2 cup seasoned rice vinegar
- 1/4 cup peeled fresh ginger slices plus 1 tablespoon finely grated ginger
- 2 tablespoons plus 1 teaspoon soy sauce
- 2 tablespoon dark sesame oil
- 2 tablespoons vegetable oil
- 1/3 cup coarsely chopped scallion
- 1 small (1-1/2 lbs.) napa cabbage, trimmed, leaves separated and stacked, halved crosswise and cut lengthwise into thin slices
- 1 yellow bell pepper, stemmed, seeded, and cut into thin strips
- 1 large carrot, cut into thin matchstick
- 2 tablespoons toasted sesame seeds
