Season the chicken with salt and pepper
- 2 lbs. chicken, about 6 chicken pieces (bone-in thighs)
- 1/2-1 tsp. salt, to taste
- 1/4-1 tsp. pepper
- 1 TB. vegetable/olive oil
- 6 garlic cloves, peeled
- 2-3 shallots, peeled and chopped
- 1 lb. mushrooms, cleaned and left whole if small, halved or quartered if large
- 1 Cup chicken broth
- 1 whole bay leaf
- 1 tsp Bouquet Garni
- 1 tsp Sunny Paris
- 1 tsp Worcestershire sauce
- Few shakes Liquid Smoke (optional)
- 1 can whole potatoes
- Fresh parsley
Creme Brulee Cheesecake Bars

Preheat oven to 350 degrees F
- 1 cup butter, softened
- 1 cup sugar
- 2 teaspoons vanilla
- 2 cups all-purpose flour
- 3 8 ounce pkg. cream cheese, softened
- 1 cup sugar
- 2 tablespoons all-purpose flour
- 1/3 cup sour cream
- 1 tablespoon vanilla
- 4 eggs, lightly beaten
- 1/4 cup sugar*
Apricot & Tequila-Glazed Turkey

Preheat the oven to 425 degrees F
- 5 California (dried Anaheim) chiles, stemmed and seeded
- 3 3/4 cups chicken broth, divided
- 4 tablespoons (1/2 stick) unsalted butter, melted
- 3 tablespoons tequila
- Salt
- 1 (14-pound) turkey, giblets removed and reserved
- 1/3 cup apricot preserves (recommended: Bon Maman)
- 2 teaspoons dried oregano, crumbled
- 2 cloves garlic
- Freshly ground black pepper
- Dried apricots, California chiles, fresh cilantro, for garnish
- Special equipment: poultry flavor injector (available at gourmet stores)
Cauliflower Soup

1. Heat oven to 400 degrees F
- 1 large head cauliflower (3 pounds), cut into flowerets (10 cups)
- 1 large onion, sliced
- 2 cloves garlic, each halved
- 2 tablespoons olive oil
- 2 cans (14.5 ounces each) chicken broth
- 1 cup water
- 1 bay leaf
- 1 teaspoon chopped fresh thyme
- 1 cup half-and-half
- 1 teaspoon salt
- 1/8 teaspoon black pepper
BLT Sandwich Salad

Preheat the oven to 350 degrees F
- For the salad:
- 1 head romaine lettuce, thinly sliced (about 6 cups)
- 1/2 cup chopped red onion
- 2 Roma tomatoes, seeded and chopped
- 4 slices white bread
- 1 tablespoon unsalted butter
- For the bacon:
- 1/4 cup packed light brown sugar
- 1 teaspoon Hungarian paprika
- Grated zest of 1 lemon
- 1 teaspoon black peppercorns, crushed in a bag with a mallet
- 6 strips center-cut bacon
- 6 sprigs fresh thyme
- For the dressing:
- 1/2 cup mayonnaise
- 1 to 2 tablespoons maple syrup
- 4 teaspoons whole-grain mustard
- 1 tablespoon fresh lemon juice
Korean Fried Chicken

Toss the chicken with 2 teaspoons salt and 1/2 teaspoon pepper
- 3 pounds chicken drumsticks or split wings (tips removed)
- Kosher salt and freshly ground pepper
- 1/2 cup plus 1/3 cup cornstarch
- 1/2 teaspoon baking powder
- 2 tablespoons vegetable oil
- 4 cloves garlic, minced
- 2 teaspoons grated peeled fresh ginger
- 1/4 cup low-sodium soy sauce
- 1/4 cup packed dark brown sugar
- 2 tablespoons honey
- 2 teaspoons rice vinegar
- 1 teaspoon Sriracha
- 1 teaspoon toasted sesame oil
- 1/3 cup all-purpose flour
- 1/3 cup vodka
- Toasted sesame seeds, for sprinkling

- Frosting:
- 2 squares unsweetened chocolate
- 1/2 c. butter
- 1 c. sugar
- 2 eggs
- 1/2 tsp. vanilla
- 1 c. chopped nuts
- 1/4 c. flour
- 1/4 tsp. salt
- 1/3 c. butter
- 1/3 c. unsweetened cocoa
- 1 &1/2 tsp. instant coffee
- 2 c. powdered sugar
- 1 &1/2 tsp. vanilla
- 2 Tbs. milk
Shrimp, Bacon & Cream Cheese Jalapeno Poppers

- 24 small cooked & shelled shrimp
- 24 jalapeno peppers
- 2 8 oz. pkg. cream cheese
- 1 &1/2 lb. regular sliced bacon
- Ranch dressing
Spiced Nuts-Asian Sesame

- 2 cups whole almonds
- 1 &1/2 cups oyster crackers
- 2 cups peanuts
- 1 &1/2 tsp salt
- 2 Tbs sesame seeds
- 2 tsp soy sauce
- 1 Tbs sesame oil
- 1 &1/2 tsp ginger
- 1 tsp red pepper flakes
- 1 tsp Chinese 5-spice powder
- Whole almonds
- Oyster crackers
- Peanuts
