Fennel and leeks with roasted onion vinaigrette - Mayo Clinic

Here is a great make-ahead salad, as the vegetables can be cooked and the dressing prepared up to a day in advance
- 3 leeks, green tops trimmed to about 7 inches, bottom trimmed but intact
- 2 cups vegetable stock or broth
- 1 cup white wine vinegar
- 1 cup water
- 1 tablespoon chopped fresh oregano
- 5 peppercorns
- 2 fennel bulbs, trimmed and cut in half vertically; green tops reserved for garnish
- 1/2 yellow onion, cut into 4 wedges
- 6 teaspoons extra-virgin olive oil
- 1 teaspoon Dijon mustard
- 2 tablespoons pitted, chopped kalamata olives
- 1 tablespoon chopped fennel tops or fresh flat-leaf (Italian) parsley

- 4 grouper fillets or steaks, each 5 ounces and about 1-inch thick
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 1/2 tablespoons extra-virgin olive oil
- 1 yellow onion, finely chopped
- 2 cloves garlic, minced
- 3 tomatoes, peeled and seeded, then diced
- 5 large pimiento-stuffed green olives, sliced
- 1 tablespoon capers, rinsed
- 1 jalapeno chili, seeded and cut into 1-inch julienne
- 2 tablespoons fresh lime juice
SQUASH - Roasted Corn Pudding in Acorn Squash

Preheat the oven to 375F degrees with a rack in the middle
- 1 small (2 lb.) acorn squash, cut in half lengthwise and seeded
- 1/2 tablespoon olive oil
- 1/2 cup milk
- 1 egg
- 1/2 cup fresh corn kernels
- 1 clove garlic, finely minced or grated (my addition)
- 1/4 cup finely diced red or yellow pepper (my addition)
- 1 finely minced jalapeno (my addition)
- 3 slices bacon lardons, cooked and drained (my addition)
- 1/4 cup chopped scallions
- 2 tablespoons freshly chopped parsley
- pinch each of nutmeg, cumin and chili powder or cayenne pepper
- sea salt
- 1/3 cup (30 grams) grated white cheddar cheese or Tex-Mex Blend (my choice)
FLANK****Chipotle Flank Steak Fajitas with Corn Salsa

This was great for both. I had two Weight Watcher's Whole Wheat tortillas and Dan had three
- MARINADE:
- 2 garlic cloves, minced
- 1/2 tbsp. chipotle peppers paste in adobe
- 1 tablespoon olive oil
- 2 tbsp. fresh lime juice
- 1 tablespoon brown sugar
- 1 teaspoon salt
- 1/2 teaspoon ground cumin
- 12 oz. flank steak
- SALSA:
- 1 (15 ounce) can black beans, drained
- 1 corn, grilled, cooled and kernels cut off
- 2 green onions, white and green parts thinly sliced
- 1 small red bell pepper, stemmed and seeded, finely diced
- juice of one lime or 2 key limes
- 2 tablespoons extra-virgin olive oil
- 1 teaspoon chipotle hot sauce (to taste)
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1 teaspoon fresh ground black pepper
- 1/4 cup chopped cilantro
- 1 ripe avocado sliced, or guacamole to serve
- soft corn or flour tortilla
- cheese, salsa, sour cream, fresh cilantro, fresh lime juice - to serve
RISOTTO - Risotto Milanese

In a heavy-bottomed skillet, heat the olive oil over medium heat
- 1 tablespoon extra-virgin olive oil
- 1/4 medium onion, finely minced (or equivalent amount of minced shallots)
- 1/4 teaspoon saffron threads
- 1 1/2 - 2 cups chicken stock, hot
- 1/2 cup arborio rice
- 2 tablespoons white wine
- 1 tablespoon unsalted butter, at room temperature
- 15 grams freshly grated Parmigiano-Reggiano, plus more for serving
- salt and freshly ground pepper to taste
AMARETTO - Fresh Ginger Amaretto Sour

In a cocktail shaker, muddle the rounds of ginger with lemon juice
- 1 (1-inch) knob of ginger, peeled and cut into 1/4-inch rounds
- 1 3/4 ounces freshly squeezed juice from 1 lemon
- 2 1/4 ounces amaretto, such as Disaronno
- 2 dashes Angostura bitters
- 1 egg white
- Crystallized ginger, for garnish

- 1/4 - 1/2 cup unbleached flour
- 1 egg, beaten with 1/2 tbsp. chipotle Tabasco sauce (don't skimp)
- 1/2 - 3/4 cup panko
- 1 - 2 tbsp. canola or olive oil
- GRAVY:
- 2 tbsp. Becel Buttery
- leftover flour from breading steaks
- 2/3 can consome
- 1/2 cup 1% milk
- 1 - 2 tbsp. whipping cream
- POTATOES:
- Required amount of potatoes, cut into 1 1/2" cubes
- 2 tablespoons of unsalted butter
- required amount of buttermilk
- salt and pepper to taste
