FISH*****Mediterranean Fish Stew

- GARLIC CROUTONS:
- 1/2 cup finely diced fennel
- 1/2 cup finely diced onion
- 1 leek, halved and thinly sliced
- 1 stalk celery, thinly sliced
- 2 cloves garlic, minced
- 1 tbsp. EVOO
- 1/2 cup white wine
- 1 can fire-roasted tomatoes
- 1 tsp. of fennel seeds or 1/2 teaspoon fennel pollen
- 1/4 tsp. hot pepper flakes
- 1 pinch of saffron threads
- 1 bay leaf
- 3 - 4 sprigs of fresh thyme, if you have it
- 1 1/2 cups chicken broth or stock
- sea salt and freshly ground pepper, to taste
- zest of one half orange
- 2 tablespoons freshly chopped parsley
- 1 fillet of halibut or haddock, cut into bite-sized chunks (most recently, I used a 9 ounce piece of Island Whitefish)
- 2 thickish slices (150 grams) rosemary bread (or sourdough or ciabatta bread), cut or torn into 2 inch chunks
- 1 clove garlic, minced
- 1 tablespoon olive oil
Barley - Beets, Barley and Brussels Sprouts Salad-in-a-Jar

Special equipment: four 32-ounce wide-mouthed glass jars with lids Preheat the oven to 350 degrees F
- 1 cup walnut halves
- 1 cup pearled barley
- 2 large pink grapefruits
- 3 tablespoons red wine vinegar
- 1 small shallot, finely chopped
- 2 teaspoons Dijon mustard
- 1/2 teaspoon honey
- Kosher salt and freshly ground black pepper
- 1/3 cup extra-virgin olive oil
- 4 large cooked and peeled beets, cut into 1/2-inch pieces (about 10 ounces)
- 8 cups baby spinach (about 5 ounces)
- 1/2 pound Brussels sprouts, thinly sliced
- 1/2 cup pomegranate seeds
CHICKEN*****The Soup Nazi's Mexican Chicken Chili Secret Recipe

This is really good and not too filling
- Makes 10 - 15 SERVINGS
- 1 to 1 1/4 pounds skinless, boneless chicken breast
- 1 tablespoon olive oil
- 6 cups water
- 2 cups chicken stock
- 1/2 cup plain tomato sauce
- 1 potato, peeled & chopped
- 1 large onion, diced
- 1 1/2 cups frozen yellow corn
- 1 - 500 gram package PC Butternut squash, carrot, leek & onion mix for soup (because it was on hand - is it worth buying specifically?)
- 1 carrot, sliced or diced
- 2 celery stalks, diced
- 1 can diced fire-roasted tomatoes
- 1 small can each Eden organic black beans and red kidney beans, drained but not rinsed
- 2/3 cup garbanzos, drained (because they were in the fridge)(didn't have any open the second time so I used a whole can of cannellini, undrained, instead)
- 2/3 cup cannellini beans, drained (ditto)
- 1/4 cup diced canned pimento or piquilo peppers (1 jar Unico diced pimentos, drained)
- 2 large jalapenos, diced
- 1/4 cup chopped fresh parsley
- 3 cloves garlic, minced
- 1 tablespoon chili powder
- 1/2 teaspoon chipotle chili powder
- 1 teaspoon cumin
- 1 teaspoon salt
- dash cayenne pepper
- dash dried basil
- dash dried oregano
SQUASH*****Roasted Squash with Pepitas

This was very good, although a bit mushy for my tastes - Dan loved it though and ate a large portion so it's worth
- VINAIGRETTE:
- 2 cups pumpkin or butternut squash (seeded, peeled and cut into bite sized pieces - about 1 lb.)
- 1 tablespoon olive oil
- 1/8 teaspoon cinnamon
- salt and pepper to taste
- 2 - 3 tbsp. pepitas (toasted)
- 1 tablespoon sage (julienned)
- 1 tbsp. balsamic vinegar
- 2 tsp. extra virgin olive oil
- 1 teaspoon Dijon mustard
- 1/2 teaspoon maple syrup
- 1 clove garlic (grated) - I forgot this the first time
- salt and pepper
SHRIMP****Shrimp Salad Sandwich

04/08/17 - The salad itself was pretty good but I'm not sure the bun did anything for it
- POACHING LIQUID:
- 1/2 lemon, thinly sliced
- 1 bay leaf
- 1 clove garlic, peeled and smashed
- 1/2 tablespoon black peppercorns
- 1 pound raw rock (or other small) shrimp, fresh or frozen, peeled and deveined
- OR:
- 1 pound cooked small shrimp, canned or frozen and thawed
- 1/4 cup Hellmann's Light
- 2 celery stalks, rinsed and diced small
- 1/2 lemon, zested and juiced
- 1/2 tablespoon celery seed
- 1/2 tablespoon fresh dill, chopped
- Kosher salt and freshly ground black pepper, to taste
- 2 tablespoons Hellmann's Light
- 6 top sliced hot dog buns
APPLES - Glazed Apple Wedges - Actifry

Core the apples; cut into wedges
- 4 Granny Smith apples
- 2 teaspoons hazelnut or almond oil
- 1/2 cup chopped, dried apricots, cranberries or raisins or combination
- 2 tablespoons maple syrup or honey
- 1 teaspoon ground cinnamon
- small pinch of Maldon salt
GNOCCHI****Sauteed Fiddlehead and Mushroom Gnocchi

18/05/15 - This was good, although not spectacular, which was what I was expecting
- 2 tsp unsalted butter
- 1 shallot, thinly sliced
- 1 clove garlic, sliced
- 1/4 cup sliced shiitake mushrooms (I used a portobello, in chunks)
- pinch salt
- pinch pepper flakes
- 1/2 cup fresh fiddleheads, cleaned and trimmed
- 125 g Gnocchi
- 2 wedges lemon, squeezed over at end
- 1 1/4 tbsp grated parmesan cheese
BREAST****Chicken and Black Bean Enchiladas

This is very good for both but, of course, it makes a STUPENDOUS amount - cut the recipe in half (done - 18/12/10) ...
- TO SERVE:
- 3 servings of 3 tortillas each
- 2 teaspoons olive oil
- 1/2 cup thinly sliced red onion
- 2 cloves garlic, minced
- 1 small boneless, skinless chicken breast, poached and shredded thinly (7 - 8 oz)
- 1 (15-ounce) can black beans, rinsed and drained
- 1 (4-ounce) can diced green chiles
- 1/2 cup frozen corn, if not using a salsa with corn in it, thawed and drained
- 2/3 cup prepared salsa, mild, medium or hot
- 4 tablespoons chopped fresh cilantro leaves (if you've got it)
- 3 small flour tortillas
- PC Southwest blend, to taste
- 2- 3 tbsp. creme fraiche, seasoned with a bit of grated lime, a tiny pinch of cumin and some Malden salt (or just plain, as I did it the first time)
- 3 - 4 tbsp. finely crumbled feta cheese - optional (I didn't try it, but I can see where it would be good)
SHRIMP-Stir-Fried Shrimp with Spicy Orange Sauce

Place shrimp in a medium bowl
- 1 1/2 pounds peeled and deveined large shrimp
- 1 tablespoon cornstarch
- 1/4 cup fresh orange juice
- 2 tablespoons low-sodium soy sauce
- 2 tablespoons honey
- 1 tablespoon rice wine vinegar
- 1 tablespoon chile paste with garlic (such as sambal oelek)
- 2 tablespoons canola oil
- 1 tablespoon minced peeled fresh ginger
- 3 garlic cloves, minced
- 1/3 cup chopped green onions
- cashews?
BEAN****Couscous Salad with Garbanzos

Makes a nice lunch. Try serving on a bed of spinach if eating at home
- 4 servings
- 1/2 cup whole-wheat couscous
- 4 ounces crumbled light feta cheese
- 8 pitted nicoise olives
- 2 tablespoons olive oil
- 1/4 cup chopped parsley, plus other herbs of choice
- 1 1/2 cups canned, rinsed garbanzo beans
- 2 tbsp. fresh lemon juice
- 15 cherry tomatoes
- 4 green onions, minced
- 2 stalks of celery, minced
