FAVA - Dried Fava Bean Soup (Zuppa di Fave Secche)(HF/HP)

Soak the fava beans for at least 12 hours
- 300 grams dried fava beans
- 4 cloves garlic, crushed
- 2 ounces guanciale or pancetta, julienned or diced
- 1 large onion, coarsely chopped
- 8 cherry tomatoes, halved
- 3 potatoes, diced (about 300 grams)
- 2 tablespoons fresh rosemary needles
- 6 cups vegetable stock
- 2 tablespoons extra virgin olive oil
- 1 generous piece of parmesan rind
- Salt, pepper and a pinch of hot pepper flakes
THIGHS****Mario Batali's Chicken Thighs with Bread-Crumb Dressing - 4 Points

This was great for both - Moist and very tasty
- 3 cloves Garlic
- 2 tablespoons Extra-Virgin Olive Oil
- 1 teaspoon anchovy paste
- 1/4 cup Chopped Fresh Italian Parsley
- 2/3 cup italian bread crumbs (no point using Panko if you're grinding them anyway)
- 6 Boneless Skinless Chicken Thighs
FRITTATA****Asparagus and Canadian Bacon Omelet

Very good, even Dan liked (I made him two eggs (without the asparagus, of course, and he ate it all!)
- 10 spears asparagus, trimmed and cut into bite-sized pieces
- 1 ounce Canadian Bacon, diced
- 1 tsp. EVOO
- 2 eggs
- 1 tsp. fresh thyme or other herb, if you feel like it
- salt and pepper to taste
- 20 grams cheese - I used Emmenthal

I loved this. Dan had a burger and I had this
- 1 large Portobello Mushrooms
- 1 1/4-inch thick slice red onion (don't leave this out)
- 1/2 tbsp. Extra Virgin Olive Oil
- few drops quality Balsamic Vinegar
- Kosher Salt and freshly ground Pepper
- 1 ounce Buttermilk Blue Cheese, crumbled (blue cheese butter log works well)
- 1 whole grain kaiser rolls, split and toasted
- 1 cup loosely packed Arugula

- 1/3 cup dry chickpeas or
- 1 cup canned chickpeas, drained and rinsed
- 1 onion, 1 bay leaf (if using dry beans)
- 1 tablespoon olive oil
- 1 clove garlic, minced
- Salt and pepper
- 2 tablespoons green olives, pitted
- handful chopped parsley
- Juice and zest of half a lemon
WINGS****Sticky Chinese Chicken Wings

- 6 chicken wings, cut into drumettes and wingettes
- Marinade
- 1 tsp sesame oil
- 1 tbsp lemon juice or rice wine vinegar
- 1 tbsp Chinese cooking wine, sake or sherry
- 2 tbsp soy sauce
- 1 tbsp brown sugar or honey
- 2 tbsp ketchup or tomato sauce
- 1 tbsp hoisin sauce
- 1 tbsp oyster sauce
- 1 tbsp sambal oelek (it can take the full tablespoon)
- 2 cloves garlic, minced
- 1/2 tbsp ginger, finely chopped or minced
- 1/4 tsp five spice powder (optional)
- Garnishes (optional)
- Finely sliced shallots/scallions
- Sesame seeds
- Coriander/cilantro leaves
- Finely sliced fresh chili

In a saucepan, combine the rice, water and 1/4 teaspoon of the salt
- 1/2 cup brown basmati rice, rinsed and drained
- 1 1/2 cups water
- 1/2 teaspoon salt
- 1 teaspoon sesame oil
- 1/2 red onion, chopped
- 1 clove garlic, minced
- 5 ounces fresh lump crabmeat, picked over to remove shell fragments
- 1 tablespoon fish sauce
- 1/2 teaspoon chili garlic sauce
- 2 tablespoons chopped fresh cilantro (fresh coriander)
- 1 egg, lightly beaten
- 3 tablespoons plain dried bread crumbs
- 1 tablespoon canola oil

- 1 teaspoon Chinese rice wine or Japanese cooking sake, optional
- 1 heaping teaspoon oyster sauce
- 1 teaspoon soy sauce
- 1 heaping teaspoon sugar or honey
- Salt to taste

- 1/4 large spanish onion, thinly sliced
- 1 small orange or yellow pepper, thinly sliced
- 1 clove garlic, minced
- 2 small tomatoes, coarsely chopped
- 3 tbsp. dry white wine
- 1 tsp. each of fresh rosemary and oregano
- 2 tbsp. raisins
- 1 tbsp. toasted pine nuts
- 1 tbsp. capers
- 1 tbsp. fresh lime juice (I used 2 key limes)
- 1 tbsp. brown sugar
- 2 tbsp. chopped fresh parsley
- 1 lb. swordfish steak, in one piece
- Salt and freshly ground pepper to taste
