Soak the fava beans for at least 12 hours

  • 300 grams dried fava beans
  • 4 cloves garlic, crushed
  • 2 ounces guanciale or pancetta, julienned or diced
  • 1 large onion, coarsely chopped
  • 8 cherry tomatoes, halved
  • 3 potatoes, diced (about 300 grams)
  • 2 tablespoons fresh rosemary needles
  • 6 cups vegetable stock
  • 2 tablespoons extra virgin olive oil
  • 1 generous piece of parmesan rind
  • Salt, pepper and a pinch of hot pepper flakes

This was great for both - Moist and very tasty

  • 3 cloves Garlic

  • 2/3 cup italian bread crumbs (no point using Panko if you're grinding them anyway)

  • 6 chicken wings, cut into drumettes and wingettes
  • Marinade
  • 1 tsp sesame oil
  • 1 tbsp lemon juice or rice wine vinegar

  • 1 tbsp brown sugar or honey
  • 2 tbsp ketchup or tomato sauce
  • 1 tbsp hoisin sauce
  • 1 tbsp oyster sauce
  • 1 tbsp sambal oelek (it can take the full tablespoon)
  • 2 cloves garlic, minced
  • 1/2 tbsp ginger, finely chopped or minced
  • 1/4 tsp five spice powder (optional)
  • Garnishes (optional)
  • Finely sliced shallots/scallions
  • Sesame seeds
  • Coriander/cilantro leaves
  • Finely sliced fresh chili
