GROUND****Asian Turkey or Chicken Burgers w/Slaw

- BURGERS:
- 3 servings
- SLAW
- 2 cups thinly sliced napa cabbage
- 1 carrot, shredded
- 1/2 red bell pepper, finely sliced
- OR: 2 cups prepared slaw - I used PC Carrot Slaw
- 1 tbsp. rice vinegar
- 1 tbsp. cilantro
- 3/4 tbsp. sugar - try brown next time
- 1/2 tbsp. soy sauce
- 1/2 tsp. sesame oil
- 8 - 9 ounces ground chicken or turkey
- 1 tbsp. hoisin sauce
- 1 scallion, minced
- 1/2 tsp. ground or chopped fresh ginger
- 1/2 tbsp. soy sauce
- 1/2 tsp. sesame oil

- 1 medium onion, finely chopped
- 1 carrot, finely chopped
- 4-6 heads Boston lettuce, halved lengthwise
- 1 cup (250 ml) chicken, beef, or vegetable stock
- Salt and freshly ground pepper to taste
- 3 Tbs (45 ml) cold butter
- Chopped fresh parsley for garnish
VINAIGRETTE - Meyer Lemon Vinaigrette

Add mustard, lemon juice, and salt to a medium bowl and whisk together
- 1/4 Cup Meyer Lemon Juice + zest
- 1/2 Cup Extra Virgin Olive Oil
- 2 tablespoons Champagne Vinegar
- 1/2 Tablespoon Shallot – minced
- 1/2 Clove Garlic – minced
- 1 teaspoon honey
- 1/2 Teaspoon Dijon Mustard
- 1/4 Teaspoon Sea Salt
- Dash Black Pepper

- 4 Tablespoons Maple Balsamic Vinaigrette or Orange Balsamic Vinaigrette
- 1 cup cooked quinoa (82 grams cooked-weight per jar) OPTIONAL
- 1 cup diced yellow bell pepper
- 2 cups fresh blueberries, washed and dried
- 6 slices cooked and crumbled PC 50% salt-reduced microwave bacon
- 1/4 cup (28 grams) toasted, slivered almonds
- 3 cups arugula/spinach blend (don't use the arugula alone, it's too difficult to pick up with the fork)
QUINOA****Roasted Tomatoes with Egg and Quinoa

- 15 - 20 cherry tomatoes, halved
- 2 tbsp. torn fresh basil leaves
- 1 tablespoon olive oil or garlic or lemon flavoured olive oil
- 1/2 C cooked quinoa (82 grams cooked weight)
- 1 tbsp grated parmesan cheese (5 grams)
- Pinch of sea salt
- 1 large egg
- 1 tsp fresh chopped thyme or oregano (Optional)
- Pinch of ground black pepper or chili flakes (added to tomatoes) or thinly sliced fresh chili (added to quinoa)

- SAUCE:
- 1 ounce cashews
- 1 tablespoon duck fat or olive oil
- 1 piece smoked Tofu, cut into bite-sized chunks
- 6 Garlic Scapes, cut into 2″ pieces - optional - if unavailable, add a clove or two of regular garlic
- 1 " piece of ginger, peeled and cut into thin strips
- 1/2 red onion, cut into thin strips
- 2 - 3 cloves black garlic, thinly sliced
- 2 scallions, cut into 1″ pieces on the diagonal
- 1 tablespoon dark soy sauce
- 1 tablespoon light soy sauce
- 1 tablespoon Chinese rice wine
- 1 teaspoon sesame oil
- 1 teaspoon Sambal Oelek
- 1/2 teaspoon sugar
- 4 tablespoons chicken broth + additional to adjust consistency
- 1/2 tablespoon cornstarch
- 1 tablespoon sesame seeds
- juice of 1 key lime or 1/2 regular lime

These were good, although I overdid them so they need another try
- 2 servings
- 2 teaspoons crumbled blue cheese or smoked fish, or a few truffle shavings or leaves of tarragon (I used a few bacon lardons, because I had them made for another recipe, and a tablespoon or so of PC Southwest Blend shredded cheese)
- 2 eggs
- 2 teaspoons crème fraîche
- salt and pepper
- 2 pinches chipped chives (didn't have)
BREAST - Indian-Style Chicken (Actifry)

Put the oil and sliced onion in the ActiFry
- 1 tablespoon olive oil
- 1 small onion, peeled and sliced
- 1 clove garlic, minced or thinly sliced
- 2 roma tomatoes, cut into wedges
- 2 tablespoons cashews
- 1 tablespoon mango chutney
- 1 teaspoon garam masala blend
- 1/2 tablespoon ginger root, peeled minced
- 3 1/2 ounces light coconut milk
- Salt and pepper, to taste
- 8 ounces boneless, skinless chicken or turkey breast, cut into large cubes

- 6 very small fennel bulbs, trimmed, or 2 - 3 larger bulbs (not full-sized), trimmed and quartered (about 1 lb.)
- 1/4 cup extra-virgin olive oil
- 3 cloves garlic, finely chopped - 1 tbsp.
- 4 anchovies, chopped
- 1/4 teaspoon hot red pepper flakes
- 1/4 cup dry white wine
- Grated zest of 1 orange
- Salt and freshly ground black pepper
