SHRIMP****Basque Brochettes (Prosciutto Wrapped Shrimp)

19/02/16 - These were really good and if you're going to do prosciutto-wrapped shrimp, this is the way to go - they...
- 1 tablespoon extra-virgin olive oil
- 1 - 2 garlic cloves, thinly sliced
- 1 teaspoon Piment d' Espelette (bet Aleppo or paprika would work too)
- 8 large shrimp, shelled, deveined, rinsed and patted dry, tails removed (about 200 grams)
- Freshly cracked pepper
- 4 regular slices prosciutto 4 regular slices, each cut in half lengthwise to create strips (don't use ends!)
- fresh thyme, to garnish, optional
- lemon wedges, to serve

29/03/15-Compilation of a couple of recipes, starting with a recipe at Eating Well for Brothy Chinese Noodles
- 2 teaspoons sesame oil, divided
- 5 - 6 oz. ground turkey
- 3 scallions, sliced, divided
- 1 clove garlic, minced
- 1 teaspoon minced fresh ginger
- 1 teaspoon hoisin sauce
- 1 cup reduced-sodium chicken broth (or as needed)
- 1 cup thinly sliced bok choy
- 3 ounces dried Somen or Udon noodles or fresh Udon or Meki noodles
- 1 tablespoon reduced-sodium soy sauce
- 1 teaspoon rice vinegar
- 1 small cucumber, sliced into matchsticks, for garnish (optional)
- Chinese chili oil, to taste

SHRIMP - Thai Sweet Chili Shrimp Stir-Fry

12/06/15 - My creation from a number of different recipes, originally created to use up the rest of some Thai Sweet...
- FOR THE SHRIMP:
- 8 ounces large shrimp, shelled and deveined, cut into chunks if necessary
- 1 tablespoon dry sherry
- pinch of kosher salt
- FOR THE STIR-FRY:
- 1 cup small broccoli florets
- 1/4 red pepper, cut into strips
- 1 large stalk of celery, sliced on the diagonal
- 1/4 onion, wedges
- 2 green onions, sliced
- 1 clove garlic, minced or sliced
- 1 teaspoon ginger root
- 1/4 to 1/2 jalapeno, thinly sliced OR
- 1/2 to 1 red or green Thai chili, seeded and thinly sliced
- 1 tablespoon coconut oil
- FOR THE SAUCE:
- 1/2 receipe of Thai Sweet Chili Vinaigrette (leftover from Thai Sweet Chili Chicken Salad)
- TO SERVE:
- 2 tablespoons chopped fresh cilantro and/or mint (Optional)
- 2 teaspoons toasted sesame seeds
- 5 tablespoons brown basmati rice cooked with
- 1 teaspoon sesame oil and chicken broth

Heat oil in heavy large skillet over medium-high heat
- 1/4 cup olive oil
- 2 1/2 cups chopped leeks (white and pale green parts only; about 2 large)
- 2 large bunches broccoli rabe (rapini),* stemmed, coarsely chopped
- 4 garlic cloves, peeled
- 3/4 cup vegetable broth
- 1/3 cup crme frache or whipping cream
- 1 tablespoon finely grated lemon peel
- 1 cup grated Pecorino Romano cheese, divided
- 1 pound penne
- 1 1/2 cups walnut halves, toasted
TOMATO-Moroccan Tomato Soup

In slow cooker, combine onions, garlic, sugar, chili powder, cumin, pepper, salt, cayenne pepper and cinnamon
- 2 onions, chopped
- 2 cloves garlic, chopped
- 2 tbsp packed brown sugar
- 2 tsp chili powder
- 1 tsp ground cumin
- 1/2 tsp pepper
- 1/4 tsp salt
- 1/4 tsp cayenne pepper
- 1 pinch cinnamon
- 1 can (28 oz) chopped tomatoes
- 2 cups water
- 1/4 cup tomato paste
- 1 tbsp red wine vinegar
- 3/4 cup smooth peanut butter
CHICKEN - Chicken And Mushroom Posole Soup

- 2 (8 oz) boneless, skin-on chicken breast halves (or 2 cups leftover roasted chicken, shredded)
- 2 tablespoons canola oil
- kosher salt and freshly ground black pepper
- 2 ancho chiles (I substituted New Mexico chiles- they have the same heat scale rating.)
- 1 oz dried Porcini mushrooms
- 6 cups low-sodium chicken broth
- 1 can posole (hominy)* rinsed, and drained (or reserve some liquid if desired)
- 3 tablespoons chopped fresh cilantro
- 3/4 cup shredded sharp white cheddar cheese
- fried corn tortilla strips (see Sophie’ Chopped Salad)

GRAINS****Wheat Berry Salad with Dried Fruit - 6 Points

Very good for both and an easy make-ahead dish
- 1/4 cup uncooked wheat berries
- 1 tbsp. cranberry or orange juice
- 1 tablespoon EVOO
- 1 tablespoon raspberry vinegar
- 1/2 tablespoon balsamic vinegar
- 1 teaspoons Dijon mustard
- 1/4 teaspoon salt
- 1/2 ounce dried cranberries
- 1/2 ounce dried cherries
- 1 stalk celery, thinly sliced
- 2 green onions, sliced
- 1/2 oz. slivered almonds, toasted if you have the time
- 2 tbsp. dried currants
- freshly ground black pepper
BUTTER - Compound Butters

* Soften the butter to room temperature, then stir in remaining ingredients of choice to taste
