Orange and Pastis Braised Baby Fennel

Notes: It's one of those dishes that require little in the form of active hands on preparation and that cooks on it...
- 2 bunches baby fennel or 2 medium bulbs fennel (fronds discarded - keep them for salads!)
- 2 teaspoons olive oil
- 1/2 cup fresh orange juice (clementines right now are perfect for this in the South East)
- zest of one orange
- 1/4 to 1/3 cup Pastis (or equivalent in water + 2 star anise)
- 1/3 cup water
- salt and pepper to taste
KALE****Queen of Greens Salad

- 4 servings
- 1 large Bunch Black Kale (Leaves Torn into Bite-sized Pieces) I had organic red curly kale + I used the leaves from 2 kohlrabi (they worked exactly the same as the kale and there was no taste difference - so it's a good way to use them up)
- 1/4 cup olive Oil + 1 tablespoon
- Salt and Freshly Ground Black Pepper
- 1/4 White Onion or 1 shallot (Thinly Sliced)
- 2 tablespoons White Wine Vinegar
- 1 tablespoon White Miso
- 1 teaspoon Granulated Sugar
- generous pinch of chili flakes, or finely minced Thai chili (my addition)
- 1 Mango (Diced)
- 1 Avocado (Diced)
- Salt and pepper to taste (Miso is salty!)
- handful of salted roasted pumpkin seeds or sunflower seeds (not in calorie count) I used a couple of tablespoons of toasted pine nuts but I think I'd like the seeds next time.
FISH****Salmon Rillettes

12/13 - Great for both. Makes a really nice lunch or hors d'ouvre served on a cracker, Ryvita (or toasted baguette)...
- 6 servings
- I used leftover poached salmon steak from Tarini's. If you are starting with a fresh piece of salmon, see the recipe for poaching instructions.
- 1/2 lb. salmon, flaked
- 1 small pkg. of smoked salmon (from Costco) about 70 grams?
- white pepper
- pimente d'espelette
- zest and juice of 1 lemon
- 3 tbsp. unsalted butter, cubed, at room temperature
- 1/4 tsp. pink peppercorns, crushed
- OPTIONAL: Whipped cream cheese as required to lighten mixture up for piping, if desired
TACO SEASONING - Taco Potion #19

Put all of the ingredients in a small jar and shake to combine
- 2 tablespoons chili powder
- 1 tablespoon ground cumin
- 2 teaspoons cornstarch
- 2 teaspoons kosher salt
- 1 1/2 teaspoons hot smoked paprika
- 1 teaspoon ground coriander
- 1/2 teaspoon cayenne pepper
SWEET POTATOES****Twice-Baked Sweet Potato with Chipotle Pecan Streusel

Had as a meal. Great for both and a good make ahead
- Chipotle Pecans:
- 2 medium sweet potatoes (or yams)
- 1 tbsp unsalted butter, cut into small pieces
- 1 1/2 tbsp. pure maple syrup
- 1 pinch ground cinnamon
- 1 pinch chipotle chile powder
- Pinch salt
- 1 tbsp unsalted butter
- 1/3 cups pecans
- 1 tsp granulated sugar
- 1/4 tsp chipotle chile powder
- Pinch salt
- Streusel:
- 2 tsp all-purpose flour
- 3 tbsp. packed brown sugar
- 2 tbsp. crumbled, cooked bacon
- 2 tsp unsalted butter, slightly softened
- 3 tbsp chipotle pecans, chopped
HAM****Ham and Leek Pot Pies

28/12/16 - I liked this although it was rich and it's really 9 servings, not six, which I've corrected
- 2 tablespoons unsalted butter, cubed
- 2 tablespoons EVOO
- 2 thinly sliced leeks (white and light green portion only)
- 1 medium red onion, thinly sliced
- 1/2 pound sliced fresh mushrooms
- 3 medium carrots, sliced or cubed
- 1/2 cup all-purpose flour
- 1-1/4 cups 2% milk
- 1-1/4 cups chicken, ham or vegetable broth
- 2 teaspoons dijon mustard
- 6 1/2 ounces cubed Grandpa ham
- 11 oz. Tarini's Canadian bacon
- 2 tablespoons minced fresh parsley
- 1/4 to 1/2 teaspoon ground nutmeg
- Dash pepper
- Gruyere Biscuit Topping for Pot Pies or Cornbread for Two, for topping (recipe called for puff pastry, which neither of us cares for)
YONANAS****Caramel Apple (w/Bananas)

- 2 frozen over-ripe bananas
- 6 pitted medjool dates
- 1 cup frozen apple pieces
TOMATO*****Roasted Grape or Cherry Tomatoes and Garlic in Olive Oil

Serve on toasted bread slices or pasta or puff pastry
- 16 SERVINGS of 1 tablespoon each
- 2 pints of cherry or grape tomatoes
- 4 cloves garlic, slivered
- 1/4 tsp. crushed red pepper
- 1/2 cup EVOO
- 1/4 cup whole basil leaves, optional
- 1 sprig each fresh rosemary, thyme and oregano
MAYO****HONEY-MUSTARD DIPPING SAUCE

- 4 servings
- 1/4 cup mayonnaise (or half greek yogurt)
- 1 tablespoon honey
- 1 tablespoon Creole mustard or other hot whole-grain mustard
- Pinch salt
- Pinch cayenne, or to taste
SOLE-Sole Piccata with Grapes and Capers
