Laura Calder's Yogurt Cakes

*Yogurt Cake* *Heat* the oven to 350ºF/180ºC
- Yogurt Cake
- 1 pot of yogurt (1/2 cup or 125 g)
- 2 yogurt pots of sugar or 1 cup
- 2 eggs
- Grated zest of 1 lemon (or try orange or lime)
- 3 yogurt pots of flour or 1 1/2 cups
- 1-1/2 teaspoons baking powder
- 3/4 yogurt pot of neutral-tasting oil or melted butter
- or 6 tablespoons
- Syrup
- Orange or lemon juice
- Sugar to taste (she used sugar and honey)
- NOTE: This is a recipe specifically targeted for children, hence the use of the yogurt pot for measuring the ingredients.
Laura Calder's Goat Cheese Salad with Basic Vinaigrette

1. Heat the oven to 450ºF/230ºC
- Vinaigrette
- 1 spoonful Dijon mustard
- A spoonful of red wine vinegar
- A drop of soy sauce
- A splash of balsamic vinegar
- olive oil to taste
- Salt and pepper to season
- Salad
- 1 log of goat cheese, about 4 ounces (such as Chèvre)
- 4 slices thinish bacon
- 4 tablespoons pine nuts
- 4 handfuls mesculin mix
- A few spoonfuls of vinaigrette, above
GROUND - Turkey Kofte with Apple Raita and Spinach - 6 Points

- 2 tablespoons olive oil
- 1 tablespoons tomato paste
- 1/3 small red onion, finely grated
- 1 clove garlic, finely chopped
- 1/2 teaspoon ground cumin
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon allspice
- 1/8 teaspoon cayenne powder
- Salt
- Freshly ground black pepper
- 1/2 pound ground turkey
- 2 tablespoons finely chopped flat-leaf parsley
- 1/2 lemon, juiced
- 2 cups baby spinach, washed and dried
- Pita bread, lightly toasted (not in Point count)
- 1/2 small red onion, halved and thinly sliced
- 1/3 cup Greek yogurt
- 1/2 Granny Smith apple, cored and finely diced

SHRIMP*****Gordon Ramsay's Prawn Cocktail

We both love this and it's an easy make-ahead dinner
- MARIE ROSE SAUCE:
- 1/2 ripe avocado
- 1 medium apple, cored and diced
- 1/2 lemon
- 8 - 10 oz. cooked large shrimp (10 - 12) (If you're going to make this, don't bother with anything other than Tarini's shrimp)
- 2 tablespoons Hellman's Light
- 1/4 cup Greek yogurt
- 1 tbsp. chile sauce or ketchup
- pinch cayenne
- dash tabasco
- 1/2 dash Worcestershire sauce
- 1/2 splash brandy, or to taste
- 1/2 head iceburg or romaine lettuce
FRUIT****Lemon Blueberry Sauce

- 1 1/2 cup blueberries, fresh or frozen
- 1 large lemon, zest and juice (about 1 tsp of zest and 1 tbsp of juice)
- 1/4 cup sugar
- 2 teaspoons corn starch (not sure this is necessary?)
- pinch salt
- 1/2 teaspoon vanilla extract
KALE*****Asian Kale Slaw with Tofu and Ginger Peanut Dressing

- FOR THE TOFU:
- 1 piece extra-firm tofu
- 2 tablespoons lime juice
- 2 tablespoons reduced-sodium soy sauce
- 1 tablespoon olive oil
- 2 thai chilies, thinly sliced
- few drops of chili sesame oil
- FOR THE SALAD:
- 4 cups Lacinto or curly kale, thick stems removed, washed, dried and torn into bite-sized pieces
- 3 cups prepared shredded red cabbage (I used a ready made coleslaw with carrots)
- 1 red, yellow or orange bell pepper, or combination, sliced into slivers
- 4 - 6 green onions, sliced thinly on the diagonal
- 3/4 cup roasted peanuts
- 1/2 cup chopped fresh cilantro (optional)
- FOR THE DRESSING:
- 3 tablespoons creamy peanut butter
- 3 tablespoons unseasoned rice vinegar
- 1 tablespoon fresh lime juice, from one lime
- 3 tablespoons olive oil
- 1 tablespoon soy sauce
- 1 1/2 tablespoons honey
- 1 tablespoon sugar
- 1 large clove garlic, roughly chopped
- 1-inch square piece fresh ginger, peeled and roughly chopped
- 3/4 teaspoon salt
- 1/2 teaspoon sriracha
- 1/2 teaspoon Asian sesame oil
MUFFINS - Savory Chipotle Chile Muffins

- YOGURT SAUCE:
- 3 cobs of corn (More that this won't fit)
- 1 - 2 teaspoons spicy salt (I used Weber chili lime spice mix with a good pinch of fine sea salt - the spice didn't come through so be generous with it)
- 2 green onions, thinly sliced
- 3 teaspoons EVOO - Try garlic-infused next time
- 1/4 cup greek yogurt
- 1 tsp. honey
- 1/2 lime, juiced and zested, plus wedges for serving
- 1/2 tsp. ground cumin
- 1 pinch chili power or cayenne
- 15 grams freshly grated parmigiano reggiano
- Kosher salt and freshly cracked black pepper
