VINAIGRETTE*****Honey Lemon Dressing

- grated zest of one large lemon
- 3 tablespoons fresh lemon juice
- 6 tablespoons good extra virgin olive oil
- 1 tablespoon honey
- pinch of sea salt
TOFU - Deep-Fried Bean Curd/Tofu Puffs

- 1 block of Soyganic extra firm, unflavoured tofu
- 3/4 cup cooking oil (soybean, corn or palm) I used mustard because it was on hand, peanut should work well
Dressing - Spicy Peanut Dressing for Asian Salad Jars

In a small bowl, whisk together peanut butter, sambal oelek, rice vinegar and soy sauce
- 2 tablespoons peanut butter or PB2
- 4 teaspoons sambal oelek
- 4 teaspoons rice vinegar
- 4 teaspoons soy sauce
- 1/4 cup extra virgin olive oil
- 1 tablespoon black sesame seeds
Laura Calder's Duck a l'Orange

* *Prepare the oranges:* *Remove* the peel from one oranges with a vegetable peeler
- 2 oranges, washed
- 1 duck breast, about 1/2 - 3/4 pound each
- 2 tbsp. sugar
- 1/2 tablespoon water
- 1 1/2 tablespoons red wine vinegar
- 1/3 cup duck, chicken or veal stock
- 1 tablespoon butter
- Salt and pepper
- Squirt lemon juice
MUSHROOMS****Shiitake "Bacon"

- 4 ounces shiitake mushrooms, destemmed and thinly sliced (1/8 to 1/4-inch thickness)
- 1 tablespoon olive oil (1 teaspoon counted, most of it stays on the parchment)
- 1/4 teaspoon sea salt
- Freshly ground black pepper, to taste
CIDER - Salty Maple Buttered Cider

Combine equal parts of the Maldon salt and turbinado sugar on a small plate
- Maldon salt
- turbinado sugar
- Half of 1 lemon
- 1 tablespoon softened butter
- 2 tablespoon pure maple syrup
- 1/2 vanilla bean pod, seeds scraped out or 1 teaspoon vanilla bean paste
- 4 ounces dark rum
- 8 ounces apple cider
BREAST****Grilled Chicken Pitas - 9 Points

- 1 boneless, skinless chicken breast (about 5 1/2 ounces)
- 1 tablespoon lemon juice
- 1 teaspoon lemon juice
- 1 tablespoon soy sauce
- 1 clove garlic, minced
- 1 teaspoon dried oregano, divided
- 1 small tomato, finely chopped
- 1/3 cup crumbled feta cheese (1 oz.)
- 1 tablespoon olive oil
- 1/3 cup greek yogurt
- 1 clove garlic, minced
- 1 tablespoon finely chopped walnuts
- 1 teaspoon olive oil
- 1/2 large Vidalia or purple onion, cut into thin rings - didn't use
- 3 pita breads (not in point count - Weight Watcher's Whole Wheat Pitas add 2 points per serving)
- 1 cup romaine lettuce, finely chopped
- 6 nicoise olives, chopped
- 3 slices bacon, fried crisp
- Salt
- Freshly ground black pepper
MUFFINS****Chocolate Zucchini Muffins with Five Spice

I like these quite a bit. Note changes when making again
- 2 eggs
- 1/3 cup sugar
- 1/3 cup blue agave nectar
- 2 teaspoons vanilla extract
- 3 cups grated zucchini (24 oz.) n.b. reduce to 12 ounces - I used 14 and that was too much. Also, be sure to use a fine grater, not a coarse one
- 1/3 cup applesauce (reduced from 2/3 cup)
- 1/3 cup walnut, hazlenut or almond oil (added to replace 1/3 cup applesauce)
- 1/4 cup skim milk n.b. I used 1/2 a cup and it needed it
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 1/2 cups whole wheat pastry flour
- 1 cup regular flour
- 1/3 cup sifted cocoa powder (reduced from 1/2 cup)
- 1/3 cup miniature chocolate chips (my addition)
- n.b. Add 1/3 cup chopped walnuts or pecans too, for texture
- 2 teaspoons Chinese five-spice powder (I don't know that you can really taste this but don't leave it out, just in case)
HAM*****Ham Steak with Kale & Black Eyed Peas

- 8 ounce Ham Steak, diced bite-sized (buy Grandpa ham at the deli if you can get it, it's double smoked)
- 1 tablespoon Cider Vinegar
- 2 teaspoons Dijon Mustard (or more to taste)
- 1 Clove Garlic, pressed or grated
- 2 tablespoons Olive Oil
- 2 cups Kale Leaves (Finely Chiffonade)
- 1 2/3 cups canned black eyed peas (Drained & Rinsed)
- 1/4 Red Onion, thinly sliced
- Kosher Salt and Freshly Ground Black Pepper
- 2 tablespoons whipping cream
- 1 tablespoon maple syrup
CUBE STEAK - Swiss Steak

Preheat the oven to 325 degrees F
- 12 oz. minute steak from Tarini's
- kosher salt and freshly ground black pepper
- 3 tablespoons all-purpose flour
- 2 tablespoons olive oil or bacon drippings
- 1/2 large onion, thinly sliced
- 1 clove garlic, minced
- 1 stalk celery, chopped
- 1/2 tablespoon tomato paste
- 1/2 (14.5-ounce) can fire-roasted tomatoes
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- 1/2 tablespoon Worcestershire sauce
- 3/4 cup beef broth or consome
