- 1/2 red onion, diced
- 1 bell pepper (red, yellow, orange or combination), chopped
- 1 jalapeno pepper, minced (optional - my addition)
- 2 cloves garlic, sliced or minced
- Kosher salt
- 1 lb ground turkey
- 1 teaspoon chipotle powder or chili powder (or to taste)
- [you could also season the ground turkey with chili powder or chopped pickled jalapenos instead of the chipotle powder]
- 2 Tbsp chopped fresh parsley or cilantro (if you have it)

This is quick, easy and tasty
- 3 servings
- 1 tbsp. EVOO
- 1 ounce diced pancetta
- 2 - 3 cloves garlic, thinly sliced
- 1/4 cup diced onion or 1 leek, sliced
- 1 pinch crushed red pepper flakes
- 1/2 lb. Swiss Chard (1/2 bunch, including stems)
- 1/2 cup chicken broth (plus more as needed)
- 1 can Unico organic cannellini beans
- 1 tbsp. minced fresh sage
- 1 tsp. minced fresh rosemary
- Salt and pepper to taste
- 1/4 lemon, juiced

- OPTIONAL ADDITIONS :
- Serves 10, 2 halves per serving
- 12 whole Medjool dates
- 60 grams goat cheese
- 2 tsp. finely minced fresh rosemary or thyme
- 3 slices prosciutto or serano ham, cut into 4 pieces each
- add 1 whole roasted and salted almond to each before wrapping
TUNA*****Salade Nicoise with Teriyaki Dressing - 9 Points

This is my favourite Nicoise Salad
- DRESSING:
- 4 ounces small round potatoes, halved or quartered (OPTIONAL)
- 6 oz. green beans, cut into 1 " pieces
- 1/4 red onion, thinly sliced or 2 - 3 green onions
- 1 tomato, cut into wedges
- 1 small cucumber, sliced - Optional
- 1/2 sweet red or yellow pepper, cut into strips
- 1 can Calipo Tuna, drained and flaked OR
- 1 tuna steak - 6 oz. broiled, cooled and cut into chunks (It's better with canned!)
- 1 egg, hard boiled and quartered
- 4 kalamata or nicoise black olives, pitted and halved
- 1 oz. mozzarrella or other low-fat cheese, cut into strips
- 1 tsp. dijon
- 1 clove garlic
- 1 1/2 tbsp. EVOO
- 1 tbsp. rice vinegar
- 1 tbsp. teriyaki sauce
- 1 tbsp. water
- 1 tsp. dill or tarragon
BREAST*****Chicken Chili with Green Salsa

Very good for both, Dan especially loved, and easy to pull together, even on a week night
- 7-8 ounces boneless, skinless chicken breast, cooked and shredded
- 2 tsp. EVOO
- 1 clove garlic, minced
- 1/2 medium onion, finely diced
- 1 - 19 ounce can black beans, rinsed and drained
- 14 tbsp. mild or medium-hot green salsa
- 2 tsp. chile powder (not too hot)
- 1/4 cup chicken broth
- 1/2 can fire-roasted tomatoes
- 2 tbsp. chopped fresh cilantro (oops, forgot this - it would be good, though)
- 1 pinch salt
CHICKEN****Chicken (or Turkey) Salad with Apple and Blue Cheese-Yogurt Dressing

The salad was good, and the blue cheese a nice touch
- DRESSING:
- 2 tbsp. Greek Yogurt
- 1 tbsp. mayo
- 1/2 tablespoon Extra-Virgin Olive Oil or Hazelnut oil
- 1/2 tablespoon Lemon Juice
- 30 grams crumbled Blue Cheese
- 1 tablespoon chopped Chives (Optional)
- freshly ground Black Pepper
- SALAD:
- 4 ounces diced PC Fire-Roasted Chicken or Turkey Strips
- 1 Granny Smith Apple (quartered and thinly sliced)
- 2 tbsp. chopped Dried Apricots or dried cherries or cranberries
- 2 tbsp. chopped toasted walnuts, pecan sunflower or pumpkin seeds
- 2 tbsp. thinly sliced Red Onion or scallions
- 2 celery stalks, sliced thin on the bias
- Salt & pepper to taste
TOFU****Hot and Sweet Lime Tofu

- For Sauce:
- 1 block firm tofu, pressed and diced 1/2" thick
- 3 Tablespoons cornstarch
- pinch of salt
- 1 tbsp. EVOO
- 2 green onions, minced
- 1 tsp. siracha
- 3/4 teaspoon soy sauce
- 1 1/2 tablespoons sugar
- 3/4 teaspoon sesame oil
- 1 teaspoon chili flakes
- 2 tablespoons chicken broth
- 1 tbsp. finely minced fresh mint (didn't have)
- Lime Juice or Lemon Juice - 1 tablespoon (adjust to your taste)I used 2 key limes, add the zest next time too
ROAST - Perfect Prime Rib Roast

The butcher knows how much fat to leave on the roast, so no additional trimming is needed
- A bone-in prime rib roast - 1 rib for every 2 people
- 3 medium onions, thickly sliced
- 1 teaspoon Kosher or coarse sea salt per pound of roast
- 1/2 teaspoon freshly ground black pepper per pound
- 1 teaspoon minced garlic per pound
- 1 teaspoon fresh rosemary per pound
- 1 teaspoon fresh thyme per pound
- 1/2 teaspoon olive oil per pound
