MAYO****Roasted Garlic and Chipotle Mayo

04/02/17 - VVG. I made it to accompany fried calamari (which was shit) and duck-fat fries, which it was great with
- 1 cup mayonnaise (1/2 regular and 1/2 low fat)
- 1 head garlic
- 1/2 tablespoon olive oil
- salt and pepper
- 2 - 4 teaspoons chipotle in adobe sauce, to taste
- 1/8 - 1/2 teaspoon Ancho chili powder, to taste
- 1 - 2 tablespoons fresh lemon juice, to taste
FISH****Smoked Salmon or Whitefish Caesar Salad

- 1/2 lemon, juiced and zested
- 2 anchovies
- 1 dash Worcestershire sauce
- 1/4 tablespoon Dijon mustard
- 1 clove garlic, minced
- 1 ounce light cream cheese, room temperature
- 1 1/2 tbsp. olive oil
- Sprinkled sea salt and freshly ground black pepper, to taste
- For the salad
- 1 small head romaine lettuce, sliced
- 1 handful fresh dill, chopped
- 2 green onions, chopped
- 2 tbsp. capers
- Shavings of parmesan cheese for garnish
- 1/2 cup rye bread croutons
- 1 small pkg. Costo smoked salmon slices cut into broad ribbons

- 1/4 cup unsalted butter, softened
- 1 1/2 tablespoons chopped flat-leaf parsley
- 1 large garlic clove, peeled and minced

Great tartar for when you need the real thing
- 6 servings
- 1 cup mayonnaise
- 2 1/2 tablespoons finely chopped cornichons
- 1 tablespoon minced drained capers
- 2 teaspoons freshly minced green onions
- 1 teaspoon freshly minced parsley leaves
- 1 teaspoon freshly chopped chives
- 1 teaspoon freshly minced tarragon leaves
- 1 teaspoon dried dill or 1 tbsp. fresh
- 1/2 teaspoon Creole or Dijon mustard
- 1/2 teaspoon finely grated lemon zest
- 1 teaspoon lemon juice
- Salt
- Freshly ground white pepper

- Salad
- 1/2 cup wild rice, rinsed
- 1/4 cup (22 grams) sliced almonds
- 2 cups arugula
- 1/4 cup coarsely chopped fresh basil (in my portion only - forgot this)
- 1/4 cup (35 grams) dried sour cherries or cranberries, chopped
- 2 1/2 tablespoons (20 grams) crumbled feta
- Lemon dressing
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1/2 teaspoon Dijon mustard
- 1/2 teaspoon honey or maple syrup
- 1 small clove garlic, pressed or grated
- salt and freshly ground black pepper, to taste

Wash and stem the Thai bird chiles
- 1 part salt
- 2 parts sugar
- red Thai bird chiles, to taste
- drops lime juice
- I use good quality sea salt that has a significant moisture content. It has a sharp, piquant and briny aroma and doesn't taste as harsh as regular table salt. This type of salt is perfect for dipping fruit.
- I use unrefined loose cane sugar for the golden color it adds to the seasoning and of course for its strong aroma. Look forrapadura sugar in your specialty store.
