- 2 cloves of black garlic, slivered
- 2 scallions, thinly sliced
- 4-5 leaves of lacinato kale, thinly sliced

- 2 tsp butter, softened
- 1 cup grated zucchini
- 2 green onions, minced
- 3 tbsp chopped fresh basil
- 3 eggs
- 1/2 cup whipping cream, (35%)

- 1 tsp maple syrup
- 1/4 tsp salt

- 1/4 cup red onion, thinly sliced
- 1/2 cup chopped sweet peppers, mixed colours
- 1 medium jalapeno, seeded, halved and thinly sliced, Optional
- 4 ounces poached or roasted chicken (I used breast marinated in lime juice, olive oil and taco spice blend from recipe for Chipotle's Chicken Burrito Bowl recipe)
- 4 cups mixed baby lettuce or chopped romaine
- 1/2 avocado, diced and tossed with lime juice
- 18 grams per jar of President's Choice Sea Salt Giant Corn Nuts (packed separately)Haven't tried these yet

- 3 tbsp. yogurt
- 1/2 teaspoon smoked paprika
- 1 tsp. grated peeled fresh ginger
- 1/2 teaspoon garam masala or tandoori masala spice blend
- 1 clove garlic, crushed with press
- Salt
- 8 ounces skinless, boneless chicken breast
- RAITA:
- 6 ounces cucumber, peeled
- 8 tbsp. yogurt
- 2 tbsp. loosely packed fresh mint leaves, chopped, OR
- 1/4 cup prepared tzatziki sauce

- 5 - 6 oz. cherry tomatoes, halved
- 2 - 4 tbsp. fresh Italian parsley, chopped
- 1/4 cup panko
- 10 grams grated pecorino romano
- 10 grams grated parmigiano reggiano
- grated zest of one lemon
- salt and pepper to taste
- 3 1/2 oz. farfalle
BREAST - Red Curry Chicken Kebabs with Minty Yogurt Sauce

In a large bowl, mix the curry paste with the oil and 1/2 teaspoon of salt
- 2 teaspoons Thai red curry paste
- 2 tablespoons olive oil
- Kosher salt
- 10 oz. skinless, boneless chicken breast halves, cut into 1-inch cubes
- 1/4 cup plain low-fat yogurt
- 1 tablespoon mayonnaise
- 1 teaspoon honey
- 1 teaspoon fresh lime juice
- 1 tablespoon finely chopped fresh mint
CANNELLINI****Escarole & White Bean Skillet with Bacon & Artichokes

- 2 tablespoons olive oil
- 1/3 pound meaty slab bacon or pancetta, cut into 1/4-by-2-inch strips (I used half Tarini's bacon and half pancetta)
- 1 can quartered artichoke hearts, patted dry
- 1 medium red onion, chopped
- 4 large cloves garlic, thinly sliced
- pinch hot pepper flakes
- 1 cup dry white wine
- 1 large or 2 medium heads escarole, coarsely chopped
- 1 lemon, zested (about 1 1/2 tsp.) and juiced (about 1/4 cup)
- A few grates of nutmeg
- Salt and pepper
- 2 cups chicken stock
- 1 can cannellini beans, drained
- About 1 tbsp. fresh thyme leaves (a few sprigs, stripped)
- 1 tablespoon EVOO
- Shaved or grated Parmigiano-Reggiano
