  • 4 cups mixed baby lettuce or chopped romaine
  • 1/2 avocado, diced and tossed with lime juice
  • 18 grams per jar of President's Choice Sea Salt Giant Corn Nuts (packed separately)Haven't tried these yet

  • 1 clove garlic, crushed with press
  • Salt
  • 8 ounces skinless, boneless chicken breast
  • RAITA:
  • 6 ounces cucumber, peeled
  • 8 tbsp. yogurt
  • 2 tbsp. loosely packed fresh mint leaves, chopped, OR
  • 1/4 cup prepared tzatziki sauce

  • 2 tablespoons olive oil
  • 1/3 pound meaty slab bacon or pancetta, cut into 1/4-by-2-inch strips (I used half Tarini's bacon and half pancetta)
  • 1 can quartered artichoke hearts, patted dry
  • 1 medium red onion, chopped
  • 4 large cloves garlic, thinly sliced
  • pinch hot pepper flakes
  • 1 cup dry white wine
  • 1 large or 2 medium heads escarole, coarsely chopped
  • 1 lemon, zested (about 1 1/2 tsp.) and juiced (about 1/4 cup)
  • A few grates of nutmeg
  • Salt and pepper
  • 2 cups chicken stock
  • 1 can cannellini beans, drained
  • About 1 tbsp. fresh thyme leaves (a few sprigs, stripped)
  • 1 tablespoon EVOO
  • Shaved or grated Parmigiano-Reggiano
