BEEF BRISKET - GO TO

- 3-4 lb beef brisket
- 3 tablespoons onion powder
- 3 tablespoons garlic powder
- 3 tablespoons paprika
- 1 tablespoon salt
- 3/4 teaspoon pepper
- 1 teaspoon celery salt
- 1 4-pound brisket
- 4 tablespoons corn oil
- 1/2 cup water
- 3 cups chopped onion
- 2 tablespoons finely chopped or crushed fresh garlic
MASHED POTATO CASSEROLE

The casserole may also be baked in a 13 by 9-inch pan
- 4 pounds russet potatoes , peeled and cut into 1-inch chunks
- 1/2 cup half-and-half
- 1/2 cup low-sodium chicken broth
- 12 tablespoons unsalted butter (1 1/2 sticks), cut into pieces
- 1 garlic clove , minced
- 2 teaspoons Dijon mustard
- 2 teaspoons salt
- 4 large eggs
- 1/4 cup finely chopped fresh chives
BLT SALAD WITH CORN, FETA AND AVOCADO

- Dressing:
- 2 cups butter lettuce, chopped
- 2 cups fresh Arugula, chopped
- 1 pint grape tomatoes, quartet
- 4 slices thick cut bacon, fried and crumbled
- 1 cup sweet corn
- 1 avocado, chopped
- 4 oz feta, crumbled
- 1 1/2 TBS olive oil
- 1 lime, juiced
- 1/4 tap salt
- 1/4 tap pepper
FESTIVE WINTER SALAD WITH PECANS AND APPLES

1. Combine salad, apples, nuts and bleu cheese 2
- 1 package (10 oz) any European salad mix
- 1 thinly sliced tart apple
- 1 package (4 oz) Bleu cheese, crumbled
- 1 cup toasted or glazed pecan halves
- 1/4 cup vegetable oil
- 1/4 cup balsamic vinegar
- fried, crumbled bacon
SPICY PICKLED VEGETABLES

1. Whisk together vinegar, lime juice, sugar, chili garlic sauce, and salt until sugar and salt dissolve
- 2 TBS rice vinegar
- 1 TBS fresh lime juice
- 1 tsp sugar
- 1 tsp chili garlic sauce
- 1/2 tsp kosher salt
- 1/3 cup each matchstick carrots and daikon radish
- 1/3 cup seeded, sliced cucumber
CRISPY ORANGE BEEF

1. Cut beef along grain into 2½- to 3-inch-wide lengths
- 1 1/2 pounds beef flap meat, trimmed
- 3 tablespoons soy sauce
- 6 tablespoons cornstarch
- 10 (3-inch) strips orange peel, sliced thin lengthwise (1/4 cup), plus 1/4 cup juice (2 oranges)
- 3 tablespoons molasses
- 2 tablespoons dry sherry
- 1 tablespoon rice vinegar
- 1 1/2 teaspoons toasted sesame oil
- 3 cups vegetable oil
- 1 jalapeño chile, stemmed, seeded, and sliced thin lengthwise
- 3 garlic cloves, minced
- 2 tablespoons grated fresh ginger
- 1/2 teaspoon red pepper flakes
- 2 scallions, sliced thin on bias
CAPRESE STUFFED CHICKEN

- Salt and pepper
- 8 sound dried tomatoes, packed in oil, drained
- 8 large fresh basil leaves
- 4 slices fresh mozzarella, halved (about 4 OZ)

- 1 cup oats, quick or old-fashioned
- 3/4 cup flour
- 1/2 cup butter, melted
- 1/4 cup brown sugar
SPINACH SALAD W/ BLUEBERRY VINAGRETTE

Vinaigrette: 1. In small bowl, mash blueberries w/ a fork
- VINAIGRETTE:
- 2 TBS blueberries
- 3 TBS blueberry preserves
- 3-4 TBS cider vinegar
- coarse salt and fresh ground black pepper
- SALAD:
- 6 cups baby spinach
- 1 cup blueberries
- 1/4 cup slivered shallots
- 1/2 cup crumbled goat cheese
- 1/4 cup slivered almonds, toasted
- 1 tsp dried thyme
- coarse salt and fresh ground black pepper
