TURKEY MEATBALLS W/ LEMONY RICE

Cook's Country
- Meatballs:
- 1 1/2 pounds ground turkey
- 2 tablespoons milk
- 2 slices white bread torn into 1" pieces
- 6 scallions white and green parts separated and sliced thin
- 1 large egg
- 1 TBS fresh lemon zest, DIVIDED
- 2 TBS lemon juice
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 3 tablespoons chopped fresh parsley
- 1 tablespoon olive oil
- Rice:
- 1 1/2 cups long grain or basmati white rice (see note above)
- 2 cloves garlic, finely minced or pressed through a garlic press
- 3/4 teaspoon salt, plus more to taste if needed
- 3 1/4 cups low-sodium chicken broth
- 2 tablespoons freshly squeezed lemon juice
- 1 1/2 teaspoons fresh lemon zest
- 1/2 cup freshly grated Parmesan cheese
BIG CEDAR LODGE CHILI

1. Brown meat, drain fat
- 1 lb prime rib trimmings
- 1/2 lb ground beef
- 1 cup diced onion
- 2 TBS diced jalapeno
- 1 TBS minced garlic
- 1 -16 oz cans diced tomatoes
- 1 can water
- 1/2 cup chili powder
- 1 tsp salt
- 3/4 tsp pepper
- 2 tsp cumin
- 2-15 oz cans black beans, rinsed and drained
FRENCH CHOCOLATE NUT TORTE

- 1-1/4 cups ground pecans
- 2 TBS grand marnier
- Topping:
- 2/3 cups chocolate chips
- 1/4 cup margarine

MIXED BERRY SCONES

- GLAZE:
- 1 3/4 c frozen mixed berries
- 3 TBS confectioner's sugar
- 3 cups AP flour
- 12 TBS unsalted butter, cut into 1/2" pieces
- 1/3 cup granulated sugar
- 1 TBS baking powder
- 1 1/4 tsp salt
- 3/4 c + 2TBS whole milk
- 1 large egg plus 1 large yolk
- 2 TBS butter, melted
- 1 TBS honey
CHARCOAL GRILLED TUNA STEAKS

SERVES 6 We prefer our tuna served rare or medium- rare
- Vegetable oil for cooking grate
- 3 tablespoons plus 1 teaspoon red wine vinegar
- Table salt
- 2 tablespoons Dijon mustard
- 2 teaspoons honey
- 2 tablespoons chopped fresh thyme or rosemary leaves
- 3/4 cup olive oil
- 6 tuna steaks, 1 inch thick (about 8 ounces each) (see note)
- Ground black pepper
CHEWY SUGAR COOKIES

The final dough will be slightly softer than most cookie dough
- 2 1/4 cups (11 1/4 ounces) unbleached all-purpose flour
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon table salt
- 1 1/2 cups (10 1/2 ounces) sugar , plus 1/3 cup for rolling
- 2 ounces cream cheese , cut into 8 pieces
- 6 tablespoons (3/4 stick) unsalted butter , melted and still warm
- 1/3 cup vegetable oil
- 1 large egg
- 1 tablespoon milk
- 2 teaspoons vanilla extract
FANTASY FUDGE

LINE 9-inch square pan with foil, with ends of foil extending over sides of pan; set aside
- 3 cups sugar
- 3/4 cup (1-1/2 sticks) butter or margarine
- 1 small can (5 oz.) evaporated milk (about 2/3 cup) (Do not use sweetened condensed milk.)
- 1-1/2 pkg. (12 squares) BAKER'S Semi-Sweet Chocolate, chopped
- 1 jar (7 oz.) JET-PUFFED Marshmallow Creme
- 1 cup chopped PLANTERS Walnuts
- 1 tsp. vanilla
OATMEAL BUTTERSCOTCH BARS

1. For the bars: Adjust oven rack to middle position and heat oven to 350 degrees
- Bars
- 1 1/4 cups all-purpose flour
- 2 cups quick-cooking oats
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 16 tablespoons unsalted butter (2 sticks), softened, each stick cut into 8 pieces
- 3/4 cup butterscotch chips
- 1 cup packed dark brown sugar
- 2 teaspoons vanilla extract
- 1 large egg
- Glaze
- 2 tablespoons dark brown sugar
- 1 tablespoon water
- 1/8 teaspoon salt
- 1/4 cup butterscotch chips
TOMATO BREAD

Preheat oven to 500°. Spread each slice of bread evenly with butter
- 1 loaf French bread, sliced lengthwise
- 3 TB. butter (Mary uses unsalted)
- 1/2-1 tsp. GRANULATED GARLIC POWDER (to taste)
- 3-4 fresh tomatoes, thinly sliced
- 1 tsp. KOSHER-STYLE FLAKE SALT (use 1/2 tsp. if starting with salted butter)
- 2 TB. olive oil (Mary uses extra virgin)
- 2 tsp. TURKISH OREGANO
- 8 oz. sliced Mozzarella cheese
GRILLED CHICKEN KABOBS

Don't skimp on the marinating time; any less than 3 hours and the chicken won't be as flavorful or tender
- 1/2 cup plain yogurt
- 1/2 cup extra virgin olive oil
- 4 cloves garlic , minced (about 4 teaspoons)
- 2 teaspoons dried thyme
- 2 teaspoons dried oregano
- 1 teaspoon table salt
- 1 teaspoon ground black pepper
- 1/4 teaspoon cayenne pepper
- 4 boneless, skinless chicken breasts (about 1 1/2 pounds), cut into 1-inch cubes
- 2 tablespoons chopped fresh basil
- 3 tablespoons lemon juice
- 2 red bell peppers , cut into 1-inch pieces
- 1 large red onion , prepared according to photo
- Trim the ends and cut the onion into quarters. Peel away the first 3 (outer) layers and discard the inner core. Working with the outer layers only, cut each quarter into 3 even strips. Cut each strip crosswise into 3 pieces.
