- 4 slices bacon
- juice of 1 lemon
- 1/4 tsp ground black pepper
- 1/4 tsp salt

- 1 pound 93 percent lean ground beef
- 2 tablespoons water
- 1/4 teaspoon baking soda

- 4 cups beef broth
- 6 ounces pancetta, chopped coarse
- 1 onion, chopped coarse
- 1 large carrot, peeled and chopped coarse
- 1 celery rib, chopped coarse
- 1 tablespoon unsalted butter
- 1 tablespoon extra-virgin olive oil
- 3 tablespoons tomato paste
- 1 cup dry red wine
- 1 ounce Parmesan cheese, grated (1/2 cup), plus extra for serving

- VINAIGRETTE:
- 3/4 cup + 2 TBS EVOO
- 1/4 cup sherry vinegar
- 2 tsp finely grated lemon zest
- 1 tsp sugar
- 1 tsp minced fresh garlic
- 1/2 tsp dijon mustard
- 1/2 tsp Kosher salt
- 1/4 tsp worcestershire sauce
- 1/4 tsp fresh ground black pepper

- 2 sticks (1 cup) unsalted butter, softened
- 1 lb sharp Cheddar, coarsely grated in food processor
- (about 5 cups)
- 1 large egg yolk
- 1/4 tsp Dijon mustard
- 2 TBS dry mustard
- 1/4 cup brown or yellow mustard seeds
- 2 tsp salt
- 2 cups all purpose flour, plus add'l for dusting
