Loaded Mashed Potatoes

Ingredients
- 4-5 large red potatoes
- 1/2 cup butter, softened
- 1 cup sour cream
- 1/2 cup bacon, crumbled (about 4-5 slices)
- 1/4 cup green onions, sliced
- Kosher salt and pepper

Preparation
Step 1
Bake or microwave potatoes (I microwaved to save time) until fork tender.
2. Place in large bowl and mash with a potato masher.
3. Add butter and sour cream and stir until combined. Stir in bacon and green onions and season with salt and pepper.
