Baked Stuffed Pasta Shells

These are just fantastic! This is one of DH's favorite things I make
- Serves 10
- 12 ounces jumbo pasta shells
- 10 oz mozzarella cheese, shredded (Reserve 5 oz for topping)
- 1 cup parmesan cheese, grated
- 2 lbs ricotta cheese
- 2 large eggs, lightly beaten
- 1/2 teaspoon black pepper
- 1/2-1 t. salt (unless jarred sauce has salt)
- 1 teaspoon garlic powder
- 1 tablespoon dried parsley
- 28 ounces spaghetti sauce (jarred or homemade)
- fresh basil, chopped, for garnish

- 1 1/2 cups very thinly sliced green cabbage (about 1/4 cabbage)
- 1 1/2 cups very thinly sliced red cabbage (about 1/4 cabbage)
- 2 tablespoons seasoned rice vinegar
- 1 teaspoon sesame oil
- 1/4 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 4 thinly sliced green onions (about 1/2 cup)
- 1/2 cup fresh orange juice
- 1/2 cup soy sauce
- 1/4 packed cup golden brown sugar
- 2 1/2 tablespoons seasoned rice vinegar

Heat the oil in a saute pan over medium heat
- 1 tablespoon olive oil
- 1/4 cup white onion, finely diced
- 1 large jalapeno, seeds and stem removed; finely diced
- 12 oz white American cheese, shredded
- 4 oz Monterrey Jack cheese, shredded (don’t use pre-shredded)
- 1/2 to 1 cup cream, half-and-half, or whole milk
- 1 – 2 roma tomatoes, seeds removed and diced
- 1 small bunch cilantro, roughly chopped

Preheat your oven to 325 degrees
- 3 bunches of kale
- 1/2 cup coconut oil
- 1/2 teaspoon high quality sea salt
- Chili powder to taste (optional)
- Juice of one lime (optional)
Bite Size Baked Meatballs

Preheat oven to 400 degrees F
- 1 1/4 pounds lean ground beef
- 1 egg
- 1 tablespoon olive oil
- 1/3 cup romano cheese
- 2 garlic cloves, minced
- 1 teaspoon dried basil
- 1 teaspoon dried parsley
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup panko bread crumbs
- 3 cups of your favorite pasta sauce
Lemon & Spice Grilled Shrimp

Remove the shells and devein the shrimp if not already done
- 1 lb. large raw shrimp
- Marinade
- 1/4 cup lemon juice
- 1/4 cup Worcestershire Sauce
- 1 Tablespoon minced garlic
- 1 Tablespoon minced onions
- 1 teaspoon chili powder
- 1/2 teaspoon black pepper
NaSoya Egg Rolls

Fill each wrapper with mixed filling ingredients, bake at 350 until crisp
- rotisserie chicken -fully cooked and seasoned.
- 2/3 – 1 cup of jarred or fresh salsa
- 1 cup shredded “Mexican blend” cheese
- 1/3 cup sweet white and yellow corn niblets
- 1/3 cup canned black beans, drained and rinsed well
- 1 tsp ground cumin
- salt and pepper
- large pinch of chopped fresh cilantro

Paleo Cornbread Muffins

Preheat the oven to 350. Line 6 muffin cups with liners
- 6 muffins
- (Double recipe if desired)
- 1/4 cup coconut flour
- 1/4 cup coconut oil, butter or real lard, liquified
- 2 eggs, at room temperature
- 1 Tbs. unsweetened applesauce
- 1 Tbs. raw honey
- 1/4 tsp. baking soda
- 1 tsp. apple cider vinegar
