Chicken Waldorf Salad (Danielle Walker)

To make the herb ranch dressing, whisk all of the ingredients together in a bowl and season
- HERB RANCH DRESSING:
- 1 cup (180 g) red grapes, halved
- 1 1/2 celery stalks, thinly sliced, including a few inner leaves
- 1 green apple, cored and diced
- 1/2 cup (50 g) activated walnuts, chopped
- 2 large handfuls of mixed salad greens (such as baby spinach and rocket)
- 1 1/2 cups shredded cooked chicken
- 1/2 cup (125 g) Mayonnaise (see recipe below)
- 3 T coconut milk
- 1 garlic clove, crushed
- 2 T chopped flat-leaf parsley leaves
- 1 T chopped chives
- 1 T chopped dill sprigs
- 2 tsp lemon juice
- 1/2 tsp onion powder
- MAYONNAISE:
- 4 egg yolks
- 2 tsp Dijon mustard
- 1 T apple cider vinegar
- 1 T lemon juice
- sea salt
- 400 ml olive oil or macadamia oil
- freshly ground black pepper
Erin Oprea's Roasted Asparagus

Preheat the oven to 400 F
- 1 bunch asparagus
- 1 1/2 T extra virgin olive oil
- 1 T minced garlic
- Salt and pepper to taste
- 2 T balsamic vinegar
Vintage Brownie Surprise Cake

1.Prepare white cake mix according to package directions
- Ingredients
- ◾1 box white cake mix, plus ingredients to prepare cake
- ◾1 box brownie mix (9x13" pan size), plus ingredients to prepare brownies
- ◾2 ounces semi-sweet chocolate, broken into pieces
- ◾7 ounces sweetened condensed milk (half of a 14-ounce can)
- ◾1 8-ounce package cream cheese, at room temperature
- ◾1/2 cup (1 stick) unsalted butter, at room temperature
- ◾1 teaspoon vanilla extract
- ◾4 cups powdered sugar
- ◾1/4 cup milk
Bay Town, TX Hush Puppies

Mix well and let sit overnight
- 1/2 to 1/3 cup sugar
- 2 cups flour
- 2 cups yellow cornmeal
- 12 oz. cream corn
- 2 eggs
- 2 onions, chopped fine
- 3 jalapeno peppers (seeds out)
- 1 T baking powder
- 1 tsp. salt
Apple Butternut Squash Soup

Peel squash, cut in half and remove seeds
- 1 large butternut squash
- 1 large yellow onion, chopped
- 2 T grapeseed oil
- 4 large apples, peeled, cored & quartered
- 4 cups vegetable or chicken stock
- 1 cup rice milk
- 1/4 cup coconut milk
- 1/2 tsp. nutmeg
- sea salt
Chicken with Olives & Carrots

Heat oil in a large pan over medium heat
- 2 cups cooked short grain brown rice, warm
- 1 T grapeseed oil
- 4 chicken breasts, cut into small pieces
- sea salt & black pepper
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 1/2 cups organic, free-range chicken broth
- 4 carrots, cut into 1/2 inch pieces
- 1/2 cup pitted kalamata olives
- 1/8 tsp. crushed red pepper

Red Wine Chocolate Ganache

- 2 oz dark chocolate, chopped into a few pieces
- 1/2 C unsalted butter
- 2 oz red wine (I used a Shiraz)
