Flourless Double-Chocolate Pecan Cookies

These chewy cookies are gluten-free -- great for people with celiac disease or a wheat allergy
- 3 cups confectioners' sugar
- 3/4 cup Dutch-process cocoa powder (spooned and leveled)
- 1/2 teaspoon coarse salt
- 5 ounces bittersweet chocolate, chopped
- 1 1/2 cups chopped pecans (or other type of nut)
- 4 large egg whites, room temperature
Grilled Salmon Fillet

Rinse salmon and pat dry. In a small mixing bowl, combine ingredients for sauce
- 1 1/2 lbs. boneless, skinless, fresh salmon fillet
- 3 T lemon juice
- 1 T snipped fresh basil
- 1 T cooking oil
- 1 T soy sauce
- 1 tsp. Worcestershire sauce
- 1/2 tsp. bottled minced garlic
- 1/4 tsp. pepper
Erin Oprea's Cookie Dough Hummus

Blend all of the ingredients except the chocolate chips in a food processor-be prepared to blend for a while
- 1 15 oz can chickpeas, drained and rinsed
- 1 tsp vanilla extract
- 1/4 cup old-fashioned oats
- Pinch of salt
- 1/4 cup natural creamy peanut butter
- 1/4 cup unsweetened vanilla almond milk
- 1 1/2 T brown sugar (or sweetener of choice)
- 1/3 cup dark chocolate chips
Raspberry Vinaigrette

Place all ingredients in a blender and blend until desired consistency is reached
- 3/4 cup olive oil
- 1/4 cup apple cider vinegar or raspberry vinegar
- 1 tsp. sea salt
- 2 T raw honey
- 1 tsp. dried basil
- 1/2 cup fresh or frozen red raspberries
- 1/4 cup water
Lasagna Soup

Heat olive oil in a large pot over medium heat
- for the soup:
- 2 tsp. olive oil
- 1-1/2 lbs. Italian sausage
- 3 c. chopped onions
- 4 garlic cloves, minced
- 2 tsp. dried oregano
- 1/2 tsp. crushed red pepper flakes
- 2 T. tomato paste
- 1 28-oz. can fire roasted diced tomatoes
- 2 bay leaves
- 6 c. chicken stock
- 8 oz. mafalda or fusilli pasta
- 1/2 c. finely chopped fresh basil leaves
- salt and freshly ground black pepper, to taste
- for the cheesy yum:
- 8 oz. ricotta
- 1/2 c. grated Parmesan cheese
- 1/4 tsp. salt
- pinch of freshly ground pepper
- 2 c. shredded mozzarella cheese
Erin Oprea's Peanut Butter Chocolate Protein Brownies

Preheat the oven to 350 F
- 1/2 cup almond or whole-wheat flour
- 2 whole eggs
- 3 egg whites
- 3 T unsweetened almond milk
- 1/2 cup natural peanut butter
- 4 T PB2
- 1 scoop chocolate protein powder
- 1/4 cup stevia (or sweetener of choice)
- 1/2 cup unsweetened applesauce
- 2 tsp vanilla extract
- 1/2 tsp baking powder
- 1/2 tsp salt
- 3/4 cup dark chocolate chips

Heat oven to 400. Mix thoroughly butter, shortening, 1 ½ cups sugar and the eggs
- ½ cup butter or margarine, softened
- ½ cup shortening
- 1 ½ cups sugar
- 2 eggs
- 2 ¼ cups all-purpose flour (if using self-rising flour, omit cream of tartar, soda & salt)
- 2 tsp cream of tartar
- 1 tsp soda
- ¼ tsp salt
- 2 Tbsp sugar
- 2 tsp cinnamon
Pioneer Woman's Cinnamon Rolls

Mix the milk, vegetable oil and sugar in a pan
- Cinnamon Rolls:
- 1 quart whole milk
- 1 cup vegetable oil
- 1 cup sugar
- 2 packages active dry yeast
- 8 cups (plus 1 cup extra, separated) all-purpose flour
- 1 tsp. (heaping) baking powder
- 1 tsp. (scant) baking soda
- 1 T (heaping) salt
- plenty of melted butter
- 2 cups sugar
- generous sprinkling of cinnamon
- Maple Frosting:
- 1 bag powdered sugar
- 2 tsp. maple flavoring
- 1/2 cups milk
- 1/4 cups melted butter
- 1/4 cups brewed coffee
- 1/8 tsp. salt

- 1 (12 fluid oz.) can frozen cranberry juice concentrate
