Roasted Tomato & Goat Cheese Toasts

I love the tartness of the roasted tomatoes with the creaminess of the soft goat cheese in this easy starter
- 1 pint cherry tomatoes, quartered
- salt & pepper to taste
- 1 T olive oil, plus 1/4 cup
- 1 baguette, cut into eighteen 1/4 inch thick slices
- 1/4 cup soft goat cheese at room temperature
- 9 small fresh basil leaves

Preheat the oven to 450 F
- 1 cup almond flour
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp cayenne pepper (optional)
- 2 egg whites
- 2 lbs chicken tenders
Florentine Omelet

In a bowl, beat the eggs. Stir in spinach, onion, mushrooms and garlic
- 1 T coconut oil
- 3 eggs
- 1 handful spinach
- 1/4 small onion, thinly sliced
- 1/2 cup mushrooms
- 1 T garlic, pressed
- 1/2 cup sundried tomatoes
- 3 T crumbled feta cheese (optional)
Strawberry Shortcake Sushi

Preheat the oven to 400º
- Ingredients:
- cake -
- 2/3 cup all-purpose flour
- 1 t baking powder
- 1/4 t salt
- 1/2 cup sugar
- 3 eggs + 2 more egg whites
- 1 t vanilla
- 2 T powdered sugar, for the towel when wrapping the cake
- filling* -
- 2 cups whipping cream
- 1/2 cup powdered sugar
- 1 t vanilla or 1/2 a vanilla bean
- 1 cup diced strawberries + more for topping
- I had a little less than half left over, so feel free to cut the filling recipe in half and you should be fine.
- Strawberry Coulis
- 2 cups quartered and hulled strawberries, mashed
- 1/4 cup water
- 3 T granulated sugar
- 1 T lemon juice
Pumpkin Pancakes with Nutmeg Whipped Cream

Pancakes: In a separate bowl, mix together the milk, pumpkin, egg, oil and vinegar
- Pancakes:
- 2 cups all-purpose flour
- 3 T brown sugar
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. ground allspice
- 1 tsp. ground cinnamon
- 1/2 tsp. ground ginger
- 1/2 tsp. salt
- 1 1/2 cups milk
- 1 cup pumpkin puree
- 1 egg
- 2 T vegetable oil
- 2 T vinegar
- Nutmeg Whipped Cream:
- 1 cup whipping cream
- 2 T white sugar
- 3/4 tsp. vanilla extract
- 1/2 tsp. ground nutmeg

- 2 cups cold milk
- 1 Oreo pie crust (6 oz.)
- 1 tub (8 oz.) Cool Whip, thawed, divided
Erin Oprea's Zucchini Noodles with Pesto and Tilapia

Use a spiralizer (or vegetable peeler) to cut the zucchini into spaghetti-like strips
- For the Pesto:
- 2 medium zucchini
- Grated Parmesan cheese
- Tilapia or other fish of your choice
- 1 bunch fresh basil leaves
- 1/2 cup toasted pine nuts
- 1/2 cup grated Parmesan cheese
- 2 garlic cloves (or 2 T minced garlic)
- 3/4 cup extra virgin olive oil
- Blend all of the pesto ingredients in a food processor.
Egg Salad

Gently toss eggs and celery together in a medium size bowl
- 4 hardboiled eggs, peeled and chopped
- 1/4 cup mayonnaise alternative, like Vegenaise with grapeseed oil
- 1 celery stalk, finely chopped
- 2 tsp. red or sweet white onion, finely chopped
- 1 1/2 tsp. fresh squeezed lemon juice
- freshly ground black pepper & sea salt to taste
